I’m the owner of Carrots ‘N’ Cake as well as a Certified Nutrition Coach and Functional Diagnostic Nutrition Practitioner (FDN-P). I use macros and functional nutrition to help women find balance within their diets while achieving their body composition goals.


An in-depth, 4-week reverse dieting course for women who feel like their metabolism has slowed down, think they might have hormonal imbalance and can’t lose weight no matter what they do.

Mal and I are having a simple celebration for our third wedding anniversary. Of course, we wanted to do something fun and exciting for it, but our funds are bit limited with all of my insane medical bills, so we’re keeping it low-key this year. This just means that our fourth anniversary celebration will be wicked awesome!


After breakfast, I got my run on at the gym. I missed the cool weather window to run outside this morning, so I resorted to the treadmill for my speedwork workout.

  • Distance: 4 miles; including 1 mile warm-up; 2 X 1600 at 8:20 pace with 800 jogs

I felt really good running on the treadmill today. The 8:20 pace felt challenging, but not insanely tough. I actually felt like I could have picked it up a little more! Maybe I should have? All in all, it was a great, super sweaty workout. I left the gym dripping buckets!

FYI: The first Carrots ”˜N’ Weights workout will be posted tomorrow morning. I’m pretty sore from yesterday’s Body Pump class, so I didn’t end up lifting today. Keep an eye out for it!

On my way home from the gym, I stopped by Lowe’s to pick up a romantic anniversary gift for my husband. (What? Lowe’s doesn’t carry those types of gifts?!)

Over the weekend, Mal and I didn’t have any luck finding a pair of plastic Adirondack chairs for our backyard, so I called around and found some at Lowe’s. Aren’t they cute?!

I think these chairs are going to get a lot of use. And now Mal and I have a nice little memory of our third anniversary every time we look at them!

Mal and I planned to have lunch together on our back porch this afternoon, but my stomach started to grumble after my workout, so I snacked on a mini Larabar. It held off my hungry for, like, um, 10 minutes. A little while later, I ended up eating a spoonful of almond butter straight from the jar.

Mal walked in the door a little after 1:00 pm, and I was more than ready to eat. Before he arrived, I set the table and prepared a special anniversary lunch for us.

Before we dug in, we opened our anniversary presents to each other. Mal mentioned that he wanted some new music on his iPod, so I bought him an iTunes gift certificate. He was psyched! (iTunes makes it really easy to buy stuff– just one click of the mouse!)

With a Marylou’s gift card inside! Wahoo! Best gift ever! Using a gift card to buy my iced coffees doesn’t make my expensive habit seem so bad!

After opening presents, it was time to eat! We had chicken salad sandwiches made with red grapes, celery, and mayo as well as a big salad with crumbled gorgonzola.

I also ate Oatmeal Chocolate Chip Cookies for dessert.

The whole time we were eating lunch, Mal never noticed the new chairs in our backyard, so I decided to have a little fun with him. I made him close his eyes, stand up, and walk over to the edge of the porch. When he opened his eyes, he was so surprised to see the chairs!

He even ran over to them! What a nerd! Actually, I love that he was so excited!

Our simple celebration continues into the evening with cocktails in the backyard (in our new chairs) and dinner at home!

  4. I made your oatmeal choc chip cookies today – only had a scant 1/4 cup of chips left (how did that happen?!) so I used some of the Vermont Dark Choc Peanut Butter (that arrived a couple of days ago!) – let me tell you – so GOOOD! Kind of reminds me of the No-Bake cookies of my youth.

  5. I was totally bummed out last year, was planning a biggy for our 10 year wedding anniversary but had to put on hold due to excessive medical bills from my health issues! Will try to do something this year!

  10. Congrats on your anniversary. I can appreciate the whole newlywed thing, even though I am much older, (60 this September, although I feel very youthful, thank you very much), and have been a widow for 10 years. There is someone in my life, and we do plan to marry within the new few years. It’s exciting to think of celebrating anniversaries all over again, and in a similar fashion as you two. So, your post helps me look forward to being a newlywed all over again.

  12. I recently got married, 5/29/11, and went on a honeymoon to Ireland. While there my new husband and I met a 80 something year old couple who had been married for 61 years. We asked them what advice they could give to a newly married couple and the wife leaned in as though she had the secret answer everyone was looking for and said this: “The first 30 years are the hardest. Have your kids, have them young, educate them, raise them, and get rid of them. Then become best friends and enjoy your life together.” This was my favorite part of our whole trip and I think her advice will stick with us throughout our entire marriage.

    Also, my husband and I thought it was funny to remind each other throughout that trip that no matter how often we fight it will be ok b/c in 29 years, 11 months, and 3 weeks its going to get better!
