I’m not getting my hopes up quite yet since we’re supposed to get two more snow storms next week, but I see signs of spring outside, and it makes me so happy! 😎
There is some serious melt-age happening in our neighborhood today: puddles, lots of slush, and pavement on the roads peaking through the ice and snow. Even our front walkway is clear! Love it!
I also love that our sun porch is super warm today. We actually left the door open to help heat the house.
The pug may have found a new sleeping spot.
He’s out like a light right now.
Breakfast
I opened a huge can of pumpkin last week, so now I’m trying to incorporate it into lots of meals and snacks, which means I rocked the pumpkin oatmeal again this morning.
In the mix:
- 1/2 cup old-fashioned oats
- 1/4 cup canned pumpkin
- 1/2 cup soy milk
- Splash of water
- Chia seeds
- Walnuts
I also drank an iced coffee with soy milk.
Busy afternoon ahead!

I woke up to the sun shining through my windows and birds chirping in NYC this morning–hooray for signs of spring!! Those pumpkin oats look delish..I have a few more cans left over from fall and should make some soon!

I don’t think I’m ever going to ‘move on’ from pumpkin! Screw fall foods- I’m gonna enjoy it all year round if I can! 😀

Signs of spring are here in MN too — tons of slush and a few patches of clear roads/sidewalks, etc. I can’t wait to hear the bird start chirping 🙂
I love catching little signs of spring to remind me that it isn’t far away. My favorite sign is listening to the birds sing!

Good idea leaving the door open. I have a sun room in the back that is currently 74 degrees!! Love it! Spring can’t get here soon enough. Ahh, your Murphy really warms my heart.
I just got back from Boston last night…I was in awe of all the snow and icicles! It’s crazy to leave that and come home to 70 degree Cali weather…is it weird that I liked your weather better?

It is warmer today and yesterday, but just saw the news and it’s dropping back to the 20s. gulp.
ohh i feel like Murphy whenever our apartment catches the sun – i sometimes lay down in it too! weird i know.

Try freezing part of the can of pumpkin…that’s what I always do ’cause I can’t use it up that fast!

I always have trouble using up the cans I open, I have a half can of sweetened condensed milk in the fridge right now and a half can of evaporated milk. Sigh. I feel constrained when I have make a recipe with certain things and amounts of them in it.

I cook them before I eat them.
