Roasted Buffalo Cauliflower

Hello and happy Monday!

I can’t believe Mal and I traveled all the way to Hawaii and back. It was such an amazing, whirlwind trip, and I hope you enjoyed all of my blog posts so far. It was fun to write them! I still have one more post to come about the second hotel where we stayed, which was definitely a highlight of the trip. It will be on CNC first thing tomorrow””just need to finish it up!

Breakfast

This morning’s breakfast was a big, ripe plantain blended with Greek yogurt and shredded coconut. I used my Smart Stick to mix it all up, so it turned out whipped and wonderful. I also drank a glass of Dandy Blend with almond milk with breakfast.

Lunch

I spent the morning work, work, working and then broke for lunch around noon. On the menu: a burger with avocado on top and some Roasted Buffalo Cauliflower, which was so delicious and easy to make. If you like buffalo sauce, you will love this recipe! I actually ended up going back for seconds of the cauliflower because it tasted so good.

Roasted_Buffalo_Cauliflower_

Ingredients:

  • 1 large head cauliflower
  • 1/2 stick of butter, melted
  • 3/4 cup buffalo sauce (I used Frank’s Red Hot)
  • 1/2 tbsp garlic powder

Directions:

  1. Preheat oven to 450 degrees F.
  2. Cut cauliflower into florets and place in a large mixing bowl.
  3. In a separate, smaller bowl, combine butter, buffalo sauce, and garlic powder. Pour mixture over cauliflower florets and mix well until fully coated.
  4. Spread cauliflower onto a prepared baking sheet and cook for 20 minutes. Turn oven up to broil for 5 minutes or so and cook to desired crispiness.
  5. Remove from oven and enjoy!

  1. Just curious if you are purposely not eating nut butter, or if you’ve just been craving other things?! I was justifying my daily consumption based on yours;)) I haven’t seen you say anything about it in a while.

  2. I’ve never tried buffalo sauce…I don’t usually use butter as a sauce though, so maybe I wouldn’t like to try it if that’s how you’re meant to prepare it?

  3. LOVE hot sauce! I use Texas Pete’s. And put it on your usual suspects as well. But I’ve never tried it on cauliflower!! So I’m definitely going to try your recipe!

    Just curious, is the butter a necessary ingredient? Would you be able to substitute with olive or coconut oil? Or would it change the flavor too much?

  4. I went through a phase – after college – where I couldn’t eat buffalo sauce for a few years (ate way too many free buffalo wings in college). Recently, though, I’ve fallen off the wagon and put buffalo sauce on EVERYTHING. I love it!

  5. I have a head of cauliflower at home just waiting for this recipe and I love buffalo sauce! Tho, when I eat it it tends to rip up my mouth. 🙁 Maybe I’ll tone it down with some yogurt mixed in.
