Dinner
One of the best parts about meal planning as a couple is trying recipes that I would never have picked otherwise. For example, yesterday, Mal found a recipe for Roast Beef Cocktail Sandwiches with Parsley Butter, which, initially, didn’t sound that appetizing to me, but ended up turning into a fabulous and easy meal. Good eye, Mal!
Last night, Mal was in charge of making the sandwiches.
And I was in charge of making the salads.

Mal added a bunch of minced garlic to the parley butter for some added flavor. He said it was kind of bland without it.
The salads included arugula, tomato, carrot, cucumber, blue cheese crumbles, and balsamic vinegar. I think these are the first vegetables I’ve eaten in days.
After dinner, I spent the rest of the evening foam rolling the crap out of my tight muscles. Apparently, that twenty-miler really kicked my butt! My legs actually feel quite a bit better this morning. They’re still sore, but not nearly as tight.
I always used to think my Bosu was the best piece of exercise equipment I’ve ever bought because it’s so versatile, but I use my foam roller so much more. And I have a feeling I’m going to use it even more in the next few weeks.

I need to get my husband to make dinner, however it wouldn’t be at all healthy!! The best piece of exercise equipment I bought is dumb bells!! Those I use everyday!!
I love foam rolling! BUT here in Australia they cost $90!!! (I think you guys pay around $10?!) So I just stick to using the one in my gym. It’s awesome for rolling out the pain in my neck and shoulders I get from sitting at a computer all day.
LOVE the foam roller! An NECESSARY for anyone who is a fitness enthusiast AND anyone who sits all day or does repetitive movement with profession….Idea: I have seen many people use a PVC pipe. To soften it up, rubber band a rag or old sheet tightly around it (cut it to about right size). This has to be cheaper than 90$ in Australia!
