Breakfast

This morning’s breakfast was de-lic-ious. I actually made a version of it last night for dessert, so when I woke up this morning, it was pretty much the first thing I thought about. It’s sliced banana with a mixture of Greek yogurt, coconut cream, shredded coconut, honey, and vanilla extract on top, but, holy goodness, it’s amazing””sweet, thick, and creamy with lots of satisfying protein and fat. Love. It.

Sweet Coconut Cream Yogurt with Sliced Banana

Ingredients:

  • 1 large banana (TWSS, obv)
  • 1/4 cup Greek yogurt
  • 2 tbsp coconut cream
  • 1/4 tsp honey
  • 1/8 tsp vanilla extract

Directions:

  1. Slice banana and place it into a bowl.
  2. Combine Greek yogurt, coconut cream, honey, and vanilla extract in a separate bowl until smooth.
  3. Top banana with mixture and eat!

  1. I made a pot of chili tonight for dinner in honor of the food holiday. It was definitely an improvised recipe, but I used Mama Pea’s drop biscuit recipe for the topping–delicious!
