Rain = Baking

Mastermind Weekend 1/16

Hey there!

I'm Tina

Iโ€™m the owner of Carrots โ€˜Nโ€™ Cake as well as a Certified Nutrition Coach and Functional Diagnostic Nutrition Practitioner (FDN-P). I use macros and functional nutrition to help women find balance within their diets while achieving their body composition goals.

An in-depth, 4-week reverse dieting course for women who feel like their metabolism has slowed down, think they might have hormonal imbalance and canโ€™t lose weight no matter what they do.

I had planned to go for a serious power walk after work today, but the rain messed up my plans. Boooo! Instead, I got myย bootay moving in the kitchen! ๐Ÿ˜‰

I whipped up a batch of Cherry-Dark Chocolate Oatmeal Cookies. Oh, yes, I did! ๐Ÿ˜€

Cherry-Dark Chocolate Oatmeal Cookies

Makes approximately 10 cookies

  • 1 cup old-fashioned oats
  • 1/3 cup whole wheat flour
  • 1/2 cup dried cherries
  • 1/2 cup dark chocolate chunks or chips
  • 1 tsp baking powder
  • 1/2 cup maple syrup
  • 1/4 cup buttermilk

  • Preheat oven to 375*F.
  • Combine all ingredients in a large bowl. Mix well until batter is blended evenly.
  • Use a tablespoon to portion cookies on a greased baking sheet, approximately 1-2 inches apart.
  • Bake cookies for 12-15 minutes until cooked through.
  • Remove cookies from baking sheet and allow to cool on wire rack.
  • Eat and enjoy!

I love that these cookies aren’t too sweet. The dried cherries, dark chocolate, and maple syrup add just enough sweetness without going overboard. Mmm! Trust me, these cookies areย really good! I’ve already eaten three!

I ate lunch at my desk atย NuVal while working away. I had a big arugula salad topped with Buffalo Tofu and Athenos feta crumbles. On the side, I had a chocolate chip granola bar, a peach, and another iced coffee with Almond Breeze.

Mal and I are going to our friends’ house for dinner night. See ya later! ๐Ÿ˜Ž

  1. I make buffalo tofu all the time and its delicious! I like mine a bit crispy so I dont marinate it. I just cook the tofu up with some onions and peppers in a lightly oiled skillet until it gets browned on all sides, then I add the buffalo sauce towards the end and mix it up while its hot. It’s less work than marinating. You should try it!

  2. I like that this is a mini-batch, that’s the perfect size for an afternoon… in case you end up eating them all yourself, it’s not toooooo terrible ๐Ÿ™‚

  3. do you think honey or agave could work instead of maple syrup? i never have it on hand and it’s kinda of expensive to buy.

  4. oh girl, you just won my heart with those ๐Ÿ™‚ cherries and dark chocolate are CLASSIC, and i bet the chewy oatmeal is perfect with them!

  5. I need to try some of your baking. You hardly ever add any fat to your baking, and it just eludes me. I’m positive your cookies turn out more cake-like than my usual liking (I like my crisp on the outside and gooey on the inside), but those look really good!

  6. Love the ingredient list of those cookies! One question…are they more chewy/cake-like due to the lack of butter and sugar?

  7. Oooh, I could dig right into those cookies….they look SO good! I love it that you guys get rain in the middle of summer over in the east. That’s why it always looks so beautifully green in all the photos I see….love it ๐Ÿ™‚

  8. Hearing about rain in the summer always makes me homesick for Virginia…which I’m sure would easily be forgotten if I tasted one (or more) of these cookies!

Thanks for sharing the recipe. I love when baking involves so few ingredients.

  9. I totally have that coffee cup!! haha I love Starbuck’s cups and such. They are so cute ๐Ÿ˜€

Those cookies look good! They will be added to my growing list of must-bakes, lol.

  10. I love all your cookie recipes! They’re so easy and you always suggest the exact amount of sweetener I like. ๐Ÿ™‚ Some recipes out there are just way too sweet for my taste.

Now if only I could prevent myself from eating them too quickly… ๐Ÿ˜‰
