The star ingredient of tonight’s dinner was fresh figs.
Yesterday, my mom gave me a bunch of figs (more reduced produce) and said they needed to be used as soon as possible. They were super ripe and ready to be eaten!
I don’t often use figs in my cooking, so I was stumped what to do with them at first. But, thankfully, the powers of Twitter pointed me in the right direction and Pizza with Prosciutto, Gorgonzola & Balsamic Fig Compote was born! š
Balsamic Fig Compote
Inspired by The Olive Press
Ingredients:
- 1/2 tablespoon olive oil
- 1/2 cup diced onions
- 1/4 vegetable broth
- 1/4 cup balsamic vinegar
- 1 cup chopped fresh figs
- 1 tablespoons honey
Directions:
Heat olive oil in a small skillet over medium. Add onions and cook, stirring occasionally, about 5 minutes.
Add remaining ingredients and bring to a boil over high heat. Lower to a simmer and cook, stirring occasionally, until thickened and syrupy, about 10-15 minutes. Remove from heat.
Once the Balsamic Fig Compote was done, I spread it evenly on a homemadeĀ Whole Wheat Pizza Crust.
Next, I topped the pizza with crumbled gorgonzola and chopped walnuts, and then baked it for 15 minutes on 425*F. Finally, I removed the pizza from the oven and topped it with a few slices of thinly sliced prosciutto and returned it to the oven for another 3 minutes.
Viola! De-lic-ious pizza! I actually sort of impressed myself with this recipe! š
With dinner, I enjoyed a glass of white wine.
For dessert, I’m having aĀ chocolate Halloween cupcake on the couch in front of the TV. How I Met Your Mother starts right now!

I have never prepared a meal with figs — I’ve eaten meals with figs though and they taste delicious. Plus my favorite scent at B&B Works is their Fig scent. It is so homey and inviting. And I bet it tasted AMAZING on pizza.

LOVE FIGS. not a huge fan of blue cheese (or goat) and am unsure of what cheese would go well with it?!

I work with figs ALL DAY at The Girl & the Fig in sonoma, ca.
We take fresh figs, slice them in half, toss them in pancetta fat and grill them! They go on our fig salad with pancetta, goat cheese, toasted pecans and a fig and port dressing. I bet it would be goof made into a pizza…mmmm.

I don`t often use figs either, but that`s because I usually gobble them up before I can cook with them!
What a delicious dinner! Cooking Light published a recipe last year for a fig compote with gorgonzola on top of baguette slices (kind of like bruschetta). This reminded me of how tasty figs are paired with good cheese š

Very nice! I love figs – that recipe should go in your, ahem, book! It reminds me of the types of ‘zas in health and shape and what not. With fruit thats near expiration I generally make sorbet, or wrap it in puff pastry and make a galette. I like how I met your mother, its kind of like “friends” for this decade.
Cracks me up that that is what you just threw together for dinner tonight! That looks amazing!!! One of my favorite sandwiches is from Whole Foods and it is smoked turkey, fig jam, and brie…all pressed and hot! It is amazing! This pizza totally reminds me of it!
That pizza sounds like absolute heaven!! Ever since having fig balsamic vinegar, I don’t think I’ll ever want to go back to the regular stuff. Figs really add an awesome flavor to any dish.
