Piña Coladas in the Pouring Rain

Mastermind Weekend 1/16

Hey there!

I'm Tina

I’m the owner of Carrots ‘N’ Cake as well as a Certified Nutrition Coach and Functional Diagnostic Nutrition Practitioner (FDN-P). I use macros and functional nutrition to help women find balance within their diets while achieving their body composition goals.

An in-depth, 4-week reverse dieting course for women who feel like their metabolism has slowed down, think they might have hormonal imbalance and can’t lose weight no matter what they do.

Today was a really good day because it included many of my favorite things: Marylou’s iced coffee, delicious leftovers, a tough workout, discovering an awesome new restaurant, and spending time with blog friends. For a rainy Monday, there’s not much more I could ask for!

Midmorning, Mal and I took a break from working (he’s taking an online class) to visit Marylou’s to take advantage of their 25th anniversary celebration.

I had planned to order a 25-cent regular iced coffee, but I changed my mind as soon as I walked in the door of Marylou’s. I went with a Peanut Butter Wonderful iced coffee and happily paid full price for it.

A few hours later, it was time for lunch. I raided the refrigerator for leftovers from the Pig Party. I loaded up my plate with potato salad, pasta salad, pulled pork, sausage, and veggies. Holy yum.

After lunch, I hit the gym for a treadmill workout followed by my most recent Carrots ”˜N’ Weights workout, which sort of kicked my butt.

My running coach sent me a 35-minute workout for today, so I wrote it on a Post-It note to take with me to the gym.

E = Easy pace; EM = Easy-moderate pace; M = Moderate pace; and W = Walk, but I wasn’t in the mood for walking. Instead, I picked up the pace. I covered just about 4 miles.

After my treadmill workout, I pumped some iron. I think I’m going to be sore after that CNW workout!

For dinner this evening, I met Brittany and Sarah at Legal Harborside:

Legal Harborside is Legal Sea Foods’ 20,000 square foot flagship property on the Boston Waterfront, comprising three floors and three different concepts under one (retractable) roof.  You’ll find a nod to our heritage on the first floor hull, with a casual menu of seafood favorites with a twist, an oyster bar and an old-fashioned fish market.  The second floor dining room offers cuisine prepared with sensible creativity for celebratory eating and private dining events.  And those that visit the third floor promenade deck will enjoy an all-weather rooftop lounge with a retractable glass roof and walls for cocktails and bites. All aboard!

Legal Harborside is located right on the Boston waterfront and it is absolutely gorgeous inside and out. I’m already planning a trip back with Mal very soon!

It was a Monday night and pouring rain outside, but the place was still packed! Thankfully, we had a reservation, so we had no problem getting a table.

037 (500x375)

To start, we ordered a round of Skinny Piña Coladas, which were made with Bacardi Rock Coconut, coconut water, and pineapple juice. It was the best drink ever. For real. I never would have thought to add coconut water to a cocktail, but this one was amazing”” light, refreshing, and, oh, so tasty.

038 (375x500) 033 (500x375)

As an appetizer, the three of us shared an order of grilled pita chips with Roasted Sweet Pepper and Kalamata & Fig spreads. Both were excellent, especially the Kalamata & Fig spread, but, then again, I love anything with fig in it!

034 (500x375)

For my entrée, I ordered one of the starters: Buffalo Shrimp with avocado, blue cheese, and celery hearts. Oh my gosh, I loved everything about this dish. I mean, tempura shrimp with buffalo sauce and blue cheese? Sign me up!

044 (500x375)

I knew the portion would be kind of small, so I ordered a side of sautéed spinach with pine nuts and raisins. I ended up adding it to the buffalo sauce mixture and eating it with the leftover blue cheese crumbles. Yum.

It was so nice to spend time with Brittany and Sarah! As always, we had lots to chat about.

It’s way past my bedtime! Good night!

  1. Beautiful meal, yum!! Just finished your book today, it’s wonderful! Thanks for being so honest and real. I’m new to your blog, and I just love it!! You’ve inspired me to plan out my workouts for the week! Thanks for sharing!

  2. I would have never thought of using coconut water either! I like pina coladdas but stay away since they usually give me a stomach ache from all the sugar. I will have to try this for sure 🙂

  3. OK, I’m officially old! I used to go to the original Legal Seafood, back when it was a tiny, cramped, single-floor space.

  4. when I first looked at the post-it I understood e=easy and em=easy medium, but assumed the w=work! haha, looks like that’s what you made it equal anyway! great workout, your marathon training is inspiring me!

  5. My husband used to work at Legal Seafood when we lived in DC. It looks like its in a beautiful new spot there. I love the Skinny Pina Colada. I love coconut water and have tried adding it to drinks before, but I will have to try this version – sounds great!

  6. A few things!
    1) Those leftovers look so yummy, it looks like a “fresh” plate of food!
    2) Murphy is giving my pug a run for his money in the “cutest pug to ever exist” contest! 😉
    3) Legal Seafoods is one of my FAVORITE restaurants! One time my fiance & I went there & somehow ended up spending a little over $100 for 2 people… how? I have no idea, but I’m sure it was worth it! (Come to think of it, I don’t think we’ve been back since… he must be trying to tell me something!)

  7. Wow, a SKINNY pina colada? That’s awesome. Sign me up!

Looks like you ladies had a fun night, and a delicious dinner!

  8. Pingback: Protein Pancakes
  9. Coconut water!! It makes the world go round! I’m so happy you found a beverage which includes that deliciousness 🙂

PS I love how you didn’t feel like walking so you just UPPED your speed?! Wowza. I WISH I had that mindset!

  10. You have to check out the Legal Harborside on a nice day and go upstairs to the outdoor space. There is a fantastic view of East Boston. It is absolutely beautiful and if there’s a show at the Bank of America Pavilion, you can enjoy an awesome show while drinking Skinny Pina Coladas. I’ll have to try one the next time I go!

  11. yes! good job kicking your own butt at the gym 🙂

i was chatting with some girl friends the other day, and it seems like with so many exercise classes offered everywhere, no one programs their own workouts any more.. love that you’re doing the CnW workouts.. very inspiring 🙂

  12. Wow, your dinner looks phenomenal! I’ve never once thought to pair shrimp with Buffalo sauce and blue cheese – clearly, I’ve been missing out! I’m going to have to try making a dish like that at home.

  13. I just ate there this weekend (on the second floor). It was wicked expensive, but part of a fun girls’ night out and totally worth it. Turns out the host of Phantom Gourmet was sitting right behind me!
