Peanut Butter, Apricot, and Walnut Sandwich

Mastermind Weekend 1/16

Hey there!

I'm Tina

I’m the owner of Carrots ‘N’ Cake as well as a Certified Nutrition Coach and Functional Diagnostic Nutrition Practitioner (FDN-P). I use macros and functional nutrition to help women find balance within their diets while achieving their body composition goals.

An in-depth, 4-week reverse dieting course for women who feel like their metabolism has slowed down, think they might have hormonal imbalance and can’t lose weight no matter what they do.

Hooray for Sandwich Week!

This is my favorite sandwich yet! Holy awesomeness!

Makes 2 sandwiches

  • 4 dried apricots, chopped
  • 2 tbsp raisins
  • 2 tbsp chopped walnuts
  • 1/4 cup peanut butter (chunky or smooth)
  • 1/4 cup honey
  • 4 slices raisin-walnut bread

Combine all ingredients in a bowl and mix well.

Spread mixture over two slices of the bread and cover with the remaining slices.

Toast in toaster oven until peanut butter is gooey and melted.

De-lic-ious!

A nice Pinto Gris complimented this sandwich very well! 😉

Love, love, love this sandwich! I’m sure you’ll see it on CNC again soon! 😀

  1. That look FABULOUS! I’ve been craving cinnamon raisin bread for a week. Finally tomorrow I’ll be getting a loaf. Where’d you find raisin walnut bread?!

  2. I believe you must’ve created this just for me, lol! Apricots make the best jam, walnuts are my favorite nut, and I love raisin bread!

  3. I recognize your wine!! I went wine tasting in the Willamette Valley a few years ago and really liked Walnut City. Their pinot noir is really good too! (Actually for me, Pinot Noir from the Willamette Valley is shorthand for “Shelly, you will like this wine” though all the whites we tried from that region were wonderful as well.)

  4. That sandwich looks beyond delish! It reminds me of a sandwich I used to make my husband and I for dessert. I would break up those small ghiradelli squares of chocolate and put them on the bread, spread on some peanut butter and grill them! So delicious!! (you should try it!)
