Good morning, friends! Here’s another seriously delicious overnight oat recipe for you!
With summer in full swing here, I find myself whipping up a batch of overnight oats a few times a week for breakfast and this particular flavor combination with peach, vanilla, and almond is a go-to favorite lately. It’s light and fresh, sweet and creamy, packed with protein and, oh, so perfect for warm summer mornings. And, of course, all you need to do is grab a spoon and dig in, so it’s a make-ahead breakfast you can count on!
Ingredients:
- 1 medium (2-2/3″ dia) peach (ripe), diced
- 1/2 cup rolled oats
- 2/3 cup unsweetened vanilla almond milk
- 1 scoop (30g) vanilla protein powder
- 1 tbsp sliced almonds
- 1/4 tsp vanilla extract
Directions: Combine ingredients in a jar or bowl; mix well. Place in refrigerator overnight. Grab a spoon the next morning and dig in!
