Wahhh. My pumpkin oatmeal pancake completely bombed this morning. š I have no idea what happened. I’ve made a zillion oatmeal pancakes in my lifetime, but for some reason, mine totally stuck to the pan this morning.
My pumpkin oatmeal pancake ended up looking like this:
It’s not the worst looking breakfast ever– and it actually tasted pretty good– but I would have preferred a pretty oatmeal pancake with a squirt of maple syrup on top. Oh, well. I added 2 scoops of peanut butter and ate my broken oatmeal pancake like regular oatmeal.
In the mix:
- 1/3 cup oats
- 1/3 cup egg whites
- 1/2 tbsp chia seeds
- 1/4 cup canned pumpkin
- 2 tbsp wheatberries
- 1 tsp baking powder
- 1 tsp vanilla extract
- 1 tbsp raisins
We were out of iced coffee this morning, so Mal whipped up a couple of iced vanilla lattes using the TWIST.
I topped mine with a little bit of cinnamon. Mmm!
