The ridiculous number of containers filled my entire bag! 😯
I had quite a bit of roasted cauliflower leftover from the other night’s Mac & Cheese dinner, so I tried something new and different with it. Oh, yes, I did! 😉
Creamy Pumpkin Cauliflower Salad
Ingredients:
- 1-2 cups of roasted cauliflower
- 1 tbsp canned pumpkin
- 1 tbsp reduced fat sour cream (or plain Greek yogurt)
- 2 tsp raisins
- Cinnamon and nutmeg to taste
Directions:
- Combine all ingredients in a large bowl
- Chill in refrigerator and serve cold
I also had a big salad of romaine, spring mix, carrots, cucumbers, and tomatoes. I drizzled it with a little Cabernet vinegar.
I rounded out lunch with a vanilla-flavored Siggi’s, Raisin Bran (that the company sent me to sample), and a Granny Smith apple.
