Today has been full of packing… and more packing.
I woke up bright and early with my husband, ate breakfast with him, and then got right down to business packing boxes. I made a serious dent, but I still have a lot to do. At least I’m making progress! š
After breakfast, I went to Body Pump, which was my first workout since Saturday’s 12-mile run. All of a sudden my marathon motivation is starting to really wane. Maybe it’s because my attention is elsewhere? I can’t seem to motivate myself to train for a marathonĀ and move into a new house. My brain is at capacity!! Hopefully, my motivation comes back very soon because I’m planning to run 16 miles by myself tomorrow morning. Oh, boy.
Lunch
For lunch, I roasted some brussels sprouts with olive oil and Garlic Gold and reheated the leftover Pumpkin Dumplings from yesterday.
I melted a little bit of butter and sprinkled some grated Parmesan cheese on top.
Now that we are without a dining room table, Murphy seems to enjoy getting up close and personal with my food!
After lunch, I whipped up a batch of Butterscotch Chip Cookies from a recipe in Buddy Valastro’s new book:Ā Cake Boss: Stories and Recipes from Mia Famiglia. (The nice people from TLC sent it to me last week!) Buddy used chocolate chips in his cookies, but I went with butterscotch chips instead. Personally, I think butterscotch is the way to go when it comes to cookies! These babies taste SO delicious!!
