Mastermind Weekend 1/16

I'm Tina

Iโ€™m the owner of Carrots โ€˜Nโ€™ Cake as well as a Certified Nutrition Coach and Functional Diagnostic Nutrition Practitioner (FDN-P). I use macros and functional nutrition to help women find balance within their diets while achieving their body composition goals.


An in-depth, 4-week reverse dieting course for women who feel like their metabolism has slowed down, think they might have hormonal imbalance and canโ€™t lose weight no matter what they do.

Today has been full of packing… and more packing.

I woke up bright and early with my husband, ate breakfast with him, and then got right down to business packing boxes. I made a serious dent, but I still have a lot to do. At least I’m making progress! ๐Ÿ˜€


After breakfast, I went to Body Pump, which was my first workout since Saturday’s 12-mile run. All of a sudden my marathon motivation is starting to really wane. Maybe it’s because my attention is elsewhere? I can’t seem to motivate myself to train for a marathonย and move into a new house. My brain is at capacity!! Hopefully, my motivation comes back very soon because I’m planning to run 16 miles by myself tomorrow morning. Oh, boy.


For lunch, I roasted some brussels sprouts with olive oil and Garlic Gold and reheated the leftover Pumpkin Dumplings from yesterday.


I melted a little bit of butter and sprinkled some grated Parmesan cheese on top.


Now that we are without a dining room table, Murphy seems to enjoy getting up close and personal with my food!


After lunch, I whipped up a batch of Butterscotch Chip Cookies from a recipe in Buddy Valastro’s new book:ย Cake Boss: Stories and Recipes from Mia Famiglia. (The nice people from TLC sent it to me last week!) Buddy used chocolate chips in his cookies, but I went with butterscotch chips instead. Personally, I think butterscotch is the way to go when it comes to cookies! These babies taste SO delicious!!

Established in 2000, LUNAFEST promotes women filmmakers, raises awareness for women’s issues and supports women’s nonprofit organizations. To date, LUNAFEST has raised over $570,000 for local women’s community nonprofit organizations and over $360,000 for the Breast Cancer Fund.

    I love your blogs Tina! They have inspired me so much… this past week I have been making more of an effort to make food that are wholesome and healthy with lots of fresh ingredients. My partner is loving the fact that I’ve taken over the kitchen ๐Ÿ˜€

    Keep the blogs coming, I read them everyday! (With the company of my own signature breakfast… tea with skim milk and a piece of wholemeal toast with crunchy peanut butter and honey hehe)

  3. Argh I completely know what you mean! We are finalising the contruction of our new house and have to move in soon – that, combined with half ironman training and a full time job = one brain that is at capacity!!!

  4. I’d rather be on a sunny island with a book in one hand and a fruity drink in the other. My motivation starts to wane at this point in the school year. How long until winter break????
