Busy Saturday. It’s been go-go-go all day. I’ve barely had a chance to catch my breath! šÆ
After breakfast, Mal and I met up with Dave and Marie to run a bunch of errands. I knew I’d be hungry for lunch, so I grabbed some snacks to go. I brought an apple and a smoothie made with chocolate protein powder, Greek yogurt, iced coffee, and vanilla hemp milk.
Dinner
We spent a few hours running errands, so by the time we returned home, I was ready to eat a real meal. I threw together a big salad with all sorts of goodies, including leftover Edamame Guacamole, BBQ-flavored KooLoos, and a hard-boiled egg from Eggland’s Best.
The Hard-Cooked Peeled Eggs are a new EB product. (I received them in my swag bag the other night.) They’re really convenient and taste just liked hard-boiled eggs that you’d cook at home.
After dinner, I enjoyed a couple of chocolate-peanut cookie sandwiches that I made with Chocolate Oatmeal Cookies and Teddie peanut butter. Holy delicious!
Mal and I are on the go again! Engagement party next!
Enjoy the evening, bloggies!

trader joe’s makes those ready-cooked eggs too! they’re cage free and organic-fed too, i believe.
Ahah seriously, hard boiled eggs from a box… that’s pretty weird. :p
That salad looks really good though! Have fun Tina!
I hate peeling hard-boiled eggs, that sounds like an awesome product to buy and a great snack or meal component to have on hand. That cookie sandwich looks deeeeeeelish. š

@Ursi: @Diana: They come in a resealable bag.
Wow, you’re a busy girl! Have a fun night!
Oh wow..that cookie sandwich! What a brilliant way to finish a meal š
But lets dont call them organic and healthy, and so on…. Its ridiculous! Sorry, I love your blog, you`re an amazing person, but… they are…just fake and over processed…
You are crazy busy. But I love that you got a good dinner in that looks like what I had for lunch š
@Ursi: Here’s what I said about them: “They’re really convenient and taste just liked hard-boiled eggs that you’d cook at home.”
Cookie sandwich = brilliant!!!
I love the cookie sandwich. Have a great evening too Tina!
Enjoy your busy evening!
Trader Joe’s have the already boiled eggs. I am thinking about giving them a try. Whater saves time works for me.
You are so on the go. You leave me dizzy š
Holy Delicious is right! Wow; those peanut butter cookie sammies look fabulous!
Salad looks delicious! (But dessert looks even better…) I was wondering if you could tell us more about the packaged, boiled eggs? Their safety sounds rather dubious to me… :S
Have fun at the party! š

I looove eggs! You’re so lucky š What a wonderful day – enjoy the party š

I’ve had one of those crazy days, too. Just got home and immediately threw on sweats. I’m ready to settle in for the night. š
I’ve been buying those eggs for a while – love them. They taste perfect and it’s so easy. I always love to grab them for a quick snack. And yes, they’re more expensive than if I bought and cooked eggs – but they are so much faster. I work two jobs. Who the heck has time to boil eggs?!?!? I’ve enough to do already.
Wow. I live in NZ and have never heard of pre-packed hardboiled eggs. !!! Can you give us the ingredient list, Tina? And the shelf-life? Pretty fascinated. Have already texted my mum to tell her about it.
It is impressive how you manage to eat well even when you are so busy. I need to play ahead more often. Enjoy the party!
That cookie sandwich looks so tasty!
Cookie sandwich looks amazing!
Ladies, here’s a link to some info on the eggs: http://www.egglandsbest.com/egglands-eggs/hard-cooked-peeled.aspx
I’m not big on eggs, so I’ve never tried them, but I have a friend who is a health NUT who eats them a lot.
Your snack and cookie looks amazing, Tina!!
Already peeled eggs, how amazing and convenient.
Okay, so I totally just whinged about how lucky you are in America with the cheap diner food and choc pretzels.. but now I just think it’s a bit odd that you can *buy* hardboiled eggs… Ah well, each (country) to its own š
(And the peanut butter cookie sandwich completely wins my ehart again, anyway.)
your cookie sandwich looks amazing. I MUST try that idea when I have a dessert craving…super decadent!
that sandwich looks awesome!
I want that cookie sandwich! Chocolate, PB, and oatmeal??? What could be better.
Hardboiled eggs in a box…….that’s a bit weird! The cookie sandwich looks great though!
Where’d you get that green smoothie container/shaker? It’s just the right size.
@Risa: It’s from Amazing Grass.
@Ursi: How can an egg be “fake and over processed”? Eggs are real food! They just come in the bag boiled already as a convenience factor. There is no difference between buy a carton of eggs in the store and then boiling it yourself and buying a bag of eggs already boiled. It’s like buying already cooked rice….
