“Oat Bran” + My Last Meal On Earth

I whipped up another delicious “minus the oats” breakfast this morning. This time, I went for a creamier version, which reminded me a lot of oat bran. The texture looked and tasted SO MUCH like the real deal.

“Oat Bran” Minus the Oats


  • 2 tbsp ground flaxseed
  • 1 tsp ground cinnamon
  • 1 banana, mashed
  • 3/4 cup liquid egg whites (or 3 egg whites)
  • 1/2 cup unsweetened almond milk
  • 1/2 tsp vanilla (or almond) extract


  1. Whisk together egg whites and almond milk and then stir in ground flax, banana, vanilla extract, and cinnamon; blend well.
  2. In a medium saucepan, warm the mixture on the stove, stirring frequently, until the “oat bran” reaches the desired consistency; this should only take a few minutes.
  3. Top with berries, nut butter, seeds, or whatever else your little heart desires.

Serves 1

I also added fresh blackberries and peanut butter to my “oat bran.” And, of course, I enjoyed a glass of iced coffee with soy milk with my breakfast.

I really love these “minus the oats” breakfasts because they keep me satisfied for hours and hours””even more so than my regular oatmeal! This morning, for example, I ate breakfast around 7:30 AM, and just now at 12:30 PM, I’m finally hungry!

After breakfast, I took Murphy to the park. He’s been waiting all week for a chance to stretch his pug legs, so he was psyched to go this morning. I mean, doesn’t his face just say it all?

We spent a little over an hour at the park and explored a bunch of new trails.

Question of the Day

After reading about Bob Harper’s last meal on earth, I thought it would be fun to pose the same question to you guys!

If it was your last day on earth, what meal would be your last? 

Hands down, without question, my last meal would be a loaf of French bread, a tasting board of stinky cheeses, and a bottle of white wine. I’d finish off the meal with a vanilla cupcake topped with a ton of buttercream frosting and sprinkles. I’d probably throw an iced coffee in there, too.



  1. Great question! Mine would start off with a caprese salad, followed by a main course of filet mignon cooked medium rare, a loaded baked potato and a choclate shake.

  2. Trying out the oatless breakfast tomorrow, loving how creamy it looks like it comes out!
    My last meal hmmmmm….
    I would start with bacon wrapped dates with cream cheese
    Then it would have to be bbq chicken pizza with lots of sauce, thin crispy crust
    And end with real whipped cream over a dense chocolatey browny. Oh yes.

  3. I need to try that “oat bran.” Its crazy how much it actually looks like it!

    Hmmm, my last meal would have to be a HUGE ice cream sundae with hot fudge, marshmallows, nuts and chocolate sprinkles. Ice cream counts as a meal, right?

  4. Tried these the other morning and just used 2 whole eggs instead. I loved it! Thanks for sharing. My 8 year old daughter has renamed it yokemeal.

  5. That’s so tough! For my last meal, I’d probably be greedy and have a giant spread of decadent foods set before me at a top notch restaurant because I can’t think of one food that I would want over all others.

  6. My last meal on earth…that is a hard one! I think I’d have to go with home made pizza topped, sectioned in to four with all my fav toppings… blue cheese, balsamic and pear, bbq black bean and corn, grilled peach and goats cheese, pumpkin, spinach, sundried tomato and mozzarella…and of course and slice of chocolate pie with a pecan crust for dessert with a scoop of homemade ice cream…(I’m almost drooling!)

  7. My last meal on earth, would have to be Special K bars! I love chocolate and peanut butter together. My favorite combination:)

  8. Such a fun question! My last meal on earth would be something Italian with lots of cheese and meat sauce! I’d have my grandpa’s wine with it (he makes his own and it is delicious!) and finish off the meal with bread pudding.

  9. A neat idea. And I have to say, the local Japanese steakhouse would be my pick. Extra veggies, no noodles, their special butter-garlic sauce shrimp steamed on the griil, steamed rice with extra seafood sauce and their spicy tuna sushi (at least six or seven rolls). In fact, I would be happy with just the sushi!

  10. Last day meals {because I can’t pick just one}:
    Breakfast-Asiago cheese bagel with lots of cream cheese and a venti iced salted caramel mocha from Sbux.
    Lunch – Chinese!! Crab rangoon, egg rolls and beef & broccoli.
    Dinner- My mom’s specialty eggplant. She breads it, then cooks it on the stove with CRISCO!!! It is amazing…we only have it this way once a year on my husband’s birthday.
    Dessert {because we CANNOT forget dessert} – A HUGE slice of the “death by chocolate” cake from the Costco bakery.

    Geez, I am hungry now!

  11. That is such a tough question! I think it would have to start out with an appetizer of soft pretzels, then the main meal would be pizza from one of my favorite places. And for dessert – a warm, gooey brownie with hot fudge, crumbled up snickers, ice cream, and whipped cream 🙂

  13. My last meal would have to be warm homemade bread with honey and a large cup of warm tea with a cheeses and fruit thrown on for good measure.

  14. My last meal would definitely be a weird combo of foods: spaghetti, a cheeseburger, roasted rosemary potatoes, cornbread and coconut cream pie – all homemade, of course!

  15. Wowww, I think it would be hard to beat the last meal you described… except maybe swap the white wine for red. Thinking about a warm, crusty baguette smothered in brie is making me drool! Time to host a cocktail party? 🙂

  16. Just made the “oat bran” and you are right, holy yum! I am one of those people who eat oatmeal because it is good for me (and I have actually learned to like overnight oats) but I am loving this new alternative. Thanks!

  17. I am so excited you are loving cross-fit. I started doing it about 6 months ago and love it! I love your pumpkin protein pancake recipe…you should try this paleo pumpkin pancake:

    1/4 c pumpkin
    1 ripe banana
    2 eggs
    2 Tbsp almond butter

    heat frozen berries with a bit of honey for the topping…yum 🙂

    I just tried the no oat oatmeal and loved it! I used pumpkin instead of a banana and topped with trail mix- amazing! Adding it to the vault. Thanks for sharing the recipe.
