I’m the owner of Carrots ‘N’ Cake as well as a Certified Nutrition Coach and Functional Diagnostic Nutrition Practitioner (FDN-P). I use macros and functional nutrition to help women find balance within their diets while achieving their body composition goals.


An in-depth, 4-week reverse dieting course for women who feel like their metabolism has slowed down, think they might have hormonal imbalance and can’t lose weight no matter what they do.

Our friends, Dave and Marie, literally live 5 minutes away… walking, so, not surprisingly, we see them all of the time. Last week, however, was super busy for all of us, so we barely saw each other. We were all free tonight, so I invited our long lost friends over for dinner, which included yummy Chinese noodles + birthday cake (but not together).


Mal and I went to Body Pump this evening, so, by the time we got home, I was seriously starving. Usually, I have zero appetite after exercising, but today, I was famished. (Lunch was a big fail today! 😕 ) I munched on a couple of Coconut Curry Livin’ Spoonful crackers to hold me over until dinner. (Yes, I am obsessed with these crackers.)



For dinner, I tried a new recipe that my NuVal colleague, Melissa, blogged about last week: Cool Chinese Vermicelli. Everyone loved it. It’s definitely a keeper! 😀


What initially drew me to this recipe was how quick and easy it sounded to make. You know me and “real simple” recipes! 😉 Pretty much everything you see on Carrots ‘N’ Cake is a piece of cake to make and this recipe was no different.

Like always, I made a few changes to the recipe. Instead of vermicelli, I used whole wheat spaghetti, and Mal couldn’t find sesame seeds at the grocery store, so we nixed them from the recipe.


I loved the blend of flavors that came from combining the sesame oil, chili oil, balsamic vinegar, soy sauce, and sugar. It was a unique flavor, but sooo delicious! I bet letting these noodles sit overnight in the fridge will really bring out the flavor. I’m already looking forward to eating leftovers for lunch tomorrow! 😀


For dessert, we broke into Mal’s birthday cake. Mal is really enjoying his never-ending birthday! 😉


I’m so excited for American Idol tonight. Who do you think is going to win?

    I’ve totally fallen out from idol this season due to the biggest loser. I’m still discovering how amusing Adam Lambert from last season is! He wasn’t the winner though, right?

  2. I think Crystal is going to win, but I like Lee a bit better- but I’ll be happy with either of them winning honestly, I just love that show- guilty pleasure. Dinner and dessert look delicious as always!

    Those noodles look really good by the way… Not sure if I’ve ever seen chili oil anywhere here though, wonder if it’s sold in Canada?

  6. I WANT THAT CAKE. and the noodles look good too. funny, i grew up in a chinese household and i have to say my mom NEVER made noodles. we only ate them when we were out. what did she have against asian noodles?! she made pasta all the time….

  7. Pretty sure I just drooled on my computer over Mal’s cake! YUM! And I’ve totally fallen of the wagon with Idol AND Biggest Loser this season… work schedule has been nuts!


  8. Do you have any advice for controlling yourself around addicting foods such as those wheat thins? Personally, I’m addicted to Trader Joe’s Peanut Butter filled pretzels or any trail mix they have, I can’t stop mindlessly eating them, any advice?

  9. I ordered these Livin Spoonful crackers from your OpenSky store when you were having the promotion a couple weeks ago… and they arrived today!!! I literally just had my first bite of one… The curry flavor 🙂 Oh my gosh, they are so delicious, no wonder you love them!

  10. I needed sesame seeds for a recipe last week and I had a really hard time finding them. I ended up finding them in the spice section in the bagged spices (like Badia).

  11. this whole season of AI has felt pretty anti-climatic for me. i love lee & crystal and think they have had some great performances, but i keep thinking back to last year and how crazy good adam and allison were and how much kris allen improved throughout the season. i just haven’t seen much of that this year and am a little disappointed. hopefully tonight will be a good show though!

  12. So noodles, green onions, oil, sugar, balsamic vinegar and soy sauce?! That doesn’t seem like a very nutritious meal.
