It was much too hot and humid to bake tonight, but I still wanted a sweet treat after dinner. So, I got creative in the kitchen, and I came up with a quick and easy no-cook peanut butter cookie recipe. The recipe calls for only 4 ingredients and takes less than 10 minutes to prepare start to finish. And, of course, no cooking is required! You gotta try this one! 😀
Makes 8 cookies
Ingredients:
- 1/2 cup dry oats
- 1/4 cup all-purpose flour
- 1/4 cup peanut butter (chunky or smooth)
- 1/4 cup agave nectar
- Cinnamon (optional)
Directions:
- Combine all ingredients in a large bowl and mix well
- Line a baking sheet (or plate) with wax paper
- Use a tablespoon to scoop batter onto wax paper and flatten into a cookie shape
- Sprinkle with cinnamon (optional)
- Put cookies in refrigerator to cool overnight

Just a minor question. I’m a beginner raw foodie and trying to ease my way into the lifestyle. In regards to the all- purpose flour, since we’re not baking, I am assuming the flour can be eaten raw? I want to make a batch of these cookies ( because they look so delicious) for a vegetarian friend, but I don’t want to give her an upset stomach in case flour can’t be eaten raw. Much appreciated.
