If you follow me on Instagram (@carrotsncake), you may have already seen this recipe, but just in case you haven’t, here are some seriously delicious and easy-to-make No-Bake White Chocolate Chip Cookies. You can whip up a batch in a matter of minutes and customize them to your liking by using any flavor of chip you like– dark chocolate, milk chocolate, butterscotch, peanut butter… the possibilities are endless! (I just happened to have white chocolate in the house.) Enjoy!!
Ingredients:
- 1 cup almond meal
- 1 cup pitted Medjool dates (about 8)
- 1/2 cup almond butter
- 1 tsp vanilla extract
- 1/4 cup white chocolate chips
- pinch of salt
Directions:
Combine above ingredients, except for the white chocolate chips, in a food processor.
Once a batter has formed, stir in the white chocolate chips with a spoon by hand.
Form batter into large 1-inch balls and flatten with your hand on wax paper. Serve immediately or refrigerate before serving. Store cookies in an airtight plastic container in the refrigerator.
Recipe makes 8 cookies.

Love this! I am all about no bake. With a little one who just learned how to walk, this would be a great grab-n-go snack. Also, anything made with dates is my JAM!!!

These. Look. Amazing. What about the almond meal, though? Do you find that at a regular grocery store? I’m in a pretty small town with no health food stores close by … think I could substitute regular flour? Or something else?
Almond flour would work too! Trader Joe’s sells almond meal (cheap) and you can get it from Amazon.
Yum! These are perfect for quick snacks when you have a sweet tooth and don’t want to wait for them to bake!

i have a recipe like this. it’s one box of cake mix, one tub of cool whip {i use the light} and one egg. mix it ttoegher and drop onto the pan like you did. you can roll them in powdered sugar or sprinkle them then bake at 350 for about ten minutes until the tops crack . sooooooo yummy and {kind of} good for you. 🙂
