No-Bake Butterscotch Cereal Bars (Gluten-Free Option)

So, these bars were a huge hit in our house. I made a batch of them on Thursday afternoon and, by Friday afternoon, they were long gone. Between Mal, Quinn, and me, we could not get enough of these bars. They’re definitely a new family favorite!

And besides being incredibly tasty (if you like butterscotch, you will love these bars), they’re made with (mostly) wholesome ingredients and they’ll take you less than 10 minutes to prepare. Really. They’re insanely easy to make.

No-Bake Butterscotch Cereal Bars

  • 5 Medjool dates, pitted
  • 1/2 cup honey
  • 1/4 cup shredded coconut
  • 1/4 cup slivered almonds
  • 1/4 cup butterscotch morsels + extra for drizzling (about 2 tablespoons)
  • 1.25 cups Cheerios or gluten-free Cheerios
  • 1/2 teaspoon vanilla extract

Combine ingredients in a food processor or blender. Batter should a little coarse.

Line a small pan, such as a loaf pan, with parchment paper and then evenly spread batter inside. Use a spatula to firmly flatten the mixture. Freeze for at least an hour.

Remove mixture from pan, place on a cutting board, take off parchment paper, and cut into 8 bars.

Then, melt additional butterscotch morsels in the microwave and pour into a Ziplock bag with a corner snipped off (or a pastry bag). Drizzle over cereal bars. Serve immediately or store in an airtight container in the refrigerator or freezer.

Recipe makes 8 bars.

  1. Yum! These look great. Just a note, cherrios had a re-call recently because their “gluten free” cherrios are not safe for celiacs!

  2. These looks awesome and so easy! How are they, crumble-wise? My son is Quinn’s age and I’m always looking for snacks that aren’t super messy

    1. They aren’t super messy, but they’re kind of crumbly. I ended up breaking off small pieces and feeding them to Quinn to avoid a mess.

  3. Just made a batch of these today and they are so delicious and couldn’t be easier! Thanks for the great recipe!
