In honor of the day, here are some of my all-time favorite pumpkin recipes!


And, of course, it being National Pumpkin Day and all, I started my morning with Pumpkin OMG Pancakes!

I whipped up the batter yesterday afternoon.

And then stored it in the fridge overnight, so it was ready to go this morning.

The recipe is my OMG Pancakes recipe + 1/2 cup canned pumpkin + 1 tablespoon pumpkin pie spice + 1 tablespoon cinnamon + an extra 1/4 cup-ish almond flour. My batter was a little runny, so I just kept adding almond flour until it thickened.


I topped my pancakes with Teddie peanut butter and maple syrup. Delish!

I replaced the ball in Murphy‘s breakfast with a mini pumpkin, so he could enjoy National Pumpkin Day too.

  1. I never knew it was pumpkin day, good thing I had a pumpkin smoothie and pumpkin spice coffee this morning!
    I think pumpkin smoothies are my fav 🙂

    I love all things pumpkin. One of my favorites is pumpkin bread with mini chocolate chips in it, those two flavors are perfect together… AND of course PUMPKIN BEER!!

  3. Thats pretty hilarious about Murphys expression about the pumpking in his bowl. My pugs would have eaten around it and then pushed it out of the bowl to find any possible left over food lol

  4. Haha that is so cute! Just a few tips on the pancakes, a little baking powder will help make it fluffier and a little bit chia seeds will keep it from being as runny 🙂

  5. How did I not know today was National Pumpkin Day?! This just made me so excited. More reason to incorporate pumpkin into every meal, which I do a lot anyways. My favorite way to eat pumpkin is in pumpkin pie with whipped cream on top (which I only have once a year on Thanksgiving, but it’s still my absolute favorite).

  6. I think I subconsciously knew it was national pumpkin day today because I also started my day with pumpkin pancakes: Walnut, Raisin, Pumpkin Pancake.
    Murphy looks almost insulted about the pumpkin in his food, your dog is too cute.

  7. Hahaha not amused at all! I made paleo pumpkin bars last night and brought them to work today. They were demolished in .1548 seconds. Ya know, to be exact.

  8. Happy national pumpkin day! I made your sweet breakfast scramble with pumpkin for the first time this morning and Holy Moly was it delicious and so filling!

  9. Definitely going to make one of those pumpkin recipes, maybe the blondies to bring to my grandmothers for Thanksgiving. I love anything pumpkin, but pumpkin spice coffee is still my favorite. I started making my own by simply mixing a couple of teaspoons of pumpkin pie spice with my coffee grounds before I brew it, and its delicious! And much healthier than grabbing one from DD’s or Starbuck’s that use that sugar syrup crap.

  10. I had no idea there was a National Pumpkin Day! I have a recipe for “healthy” pumpkin bread with chocolate chips. The healthy part comes from the fact that I make it with whole wheat flour and flax seed. And I usually cut the sugar almost in half. Definitely going to make a loaf today!!

    And we are carving pumpkins today so I guess I can roast pumpkin seeds, too. I love pumpkins! Thanks for sharing yummy recipes, too. Can’t wait to try the pancakes.

  11. I have no idea it was national pumpkin day. But it made me a little sad there were no savory dishes on that list! I have more of a savory/salty tooth than a sweet tooth so those kinds of recipes tend to be my go to.

    One of my favorite was is in a beef and pumpkin chili:

    I know it’s not a typical chili ingredient but I love including is so much more than beans and it’s a fun way to use pumpkin up this time of year. Martha Stewart also has a enchilada recipe that includes a spicy pumpkin sauce that is fantastic!

  13. Just made pumpkin mousse with canned pumpkin, coconut cream, pie spice, coconut nectar, dash of salt, topped with a few pieces of candied ginger – yum!
