It’s Cookie Friday, but if you really need an excuse to eat some cookies, it’s also National Oatmeal Cookie Day!! :mrgreen:

Earlier this week, Christina gave me the heads-up about National Oatmeal Cookie Day, so, of course, I had to do something for the big day. Obviously, oatmeal cookies are tasty, but they’re also fairly good for you with healthy carbs and fiber from the oats. Isn’t that a good reason to eat them!? 😉

Here are a few of my favorite oatmeal cookie recipes:

Obviously, Cookie Friday + National Oatmeal Cookie Day is a reason to celebrate, so I got started first thing this morning.

Breakfast

On Twitter the other day, Julie gave me a delicious idea for breakfast: Oatmeal M&M Cookies. Oh, yes! 😀

Unfortunately, my baking experiment didn’t turn out very well. The cookies tasted fine, but they were flimsy and flat. I wanted to make a healthy-ish cookie using pinto beans, but my plan bombed. 😕

I was hungry when I woke up, so I rushed to make breakfast. I threw a whole bunch of ingredients together and didn’t really think about the outcome, so sadly, my cookies weren’t anything special.

Even still, I ate a few cookies, plus a banana and a glass of iced coffee for breakfast.

  1. I can’t believe I was not aware of the fact that today is National Oatmeal Cookie Day!?! They are my FAVORITE type of cookie…I guess I just may have to indulge in one today, for the sake of the holiday, of course 😉
    I don’t think any of my quick breakfasts are necessarily odd, but I must admit that in my “less healthy days”, I’d been known to have maybe come cold pizza or a bowl of ice cream 😛

  2. Haha, oh man I hate oatmeal pancakes for breakfast but I should’ve gone the cookie route! Unfortunately I’m pretty boring with my breakfasts because I need something easy on my stomach in the morning. However, I have been known to eat oatmeal at ALL meals of the day haha

  3. I put a mashed microwave sweet potato in my pancakes on Sunday, but that wasn’t in the interest of time so much as the interest of yumminess 😀

  4. I often eat frozen yogurt for breakfast. I know, it’s horrible, but I try to make it slightly more healthy by adding nuttzo and fruit.

  5. Those cookies look tasty to me, too bad they didnt turn out so great though 🙂 Yay for National Oatmeal Cookie Day! It just so happens that my grandma sent me home yesterday with a bag of oatmeal raisin cookies. I think that in honor of this day I’ll have to eat an extra cookie…. it just seems right!

  6. Those cookies may be flat, but they sound fabulous!

    The weirdest breakfast in the name of time (and other insanity) was one I did back in college when a friend talked me into a soup diet. On this day of the 7-day soup diet, all you could eat were beans and the vegetable soup– all day! I was desperately hungry and needed to get to class, so I opened up a can of black beans, heated them, and at from a gladware container on the way to class. Ugh, that was the worst…and weirdest for me!

  7. How about eating birthday cake first thing in the morning? And then a slice more before getting out of the door? Cant think of a better way to start birthday celebrations 🙂

  8. Sometimes i’ll eat leftovers for breakfast if i’m in a super hurry or wake up really late and it’s pretty much lunch time (i’m in college 😉 ). When I was on a snowboarding trip recently I brought my own chia seeds and amazing grass to mix into the hotel’s complimentary oatmeal for breakfast. I got the weirdest looks.

  9. HAHA!! I think it’s hilarious that the m&ms “sunk” into the cookie… they look like they’re hiding! I like the flatness of the cookies though – it looks crispy and deliciously satisfying.

  10. Just a little aside, I think that some of your posts aren’t showing up or something. For example, I can’t see your dinner post from last night. There are also a few other times where I see that a meal is skipped and you don’t mention it in the next post which is why I think I can’t see them.

  11. Some people might think eating dark chocolate for breakfast is weird, but it’s a regular event for me. And those cookies LOOK wonderful, at least!
