My Recipe for a Perfect July 4th Celebration

I'm Tina

I’m the owner of Carrots ‘N’ Cake as well as a Certified Nutrition Coach and Functional Diagnostic Nutrition Practitioner (FDN-P). I use macros and functional nutrition to help women find balance within their diets while achieving their body composition goals.


An in-depth, 4-week reverse dieting course for women who feel like their metabolism has slowed down, think they might have hormonal imbalance and can’t lose weight no matter what they do.

My recipe for a perfect July 4th celebration: friends, laughter, pugs, pulled pork, and watermelon! :mrgreen:

Really, today was such a nice day. Our friends, Erin and Mike, invited a bunch of us over to their house for an afternoon barbeque. It was exactly how I wanted to spend the day, and I throughly enjoyed myself.

While we waited for everyone to arrive, we mixed and mingled and snacked on some appetizers. (I waited until the main course to dig in. You’ll see why soon!)

A little while later, it was time to eat! Mike is an amazing cook, so I was psyched to eat his food. I was also wicked hungry!

Our hosts cooked homemade pulled pork sandwiches with a lemon citrus coleslaw, grilled pesto chicken, tortellini pasta salad, red potato salad, and corn on the cob. Holy moly!

Erin gave me a heads-up about the menu last night, so I brought my own gluten-free bun for my pulled pork sandwich and added some potato salad on the side. Mmm! I totally had a moment with my sandwich. Amazing.

For the pugs! They went CRAZY over it!

Seriously, Murphy and Ping were like crack addicts around the watermelon. They followed us around while we were eating it and dug rinds out of the woods and garbage””well, that was more Murphy than Ping. Ping has manners; Murphy doesn’t.

I had no clue that Murphy liked watermelon so much! What a nut!

The barbeque also included some swimming. The water was pretty cold, so the ladies didn’t end up going for a dip in the pool, but a bunch of the guys did.

But, he decided that he looked too ridiculous wearing his doggie life jacket and demanded that it be taken off!

  3. I love pulled pork! I’m glad you got to enjoy some on a GF bun.

    Last night we went swimming and my sister brought her English Bulldog — he has an orange life jacket that he has to wear since he cannot swim 🙁 He looks so cute in it though!

  7. Pulled pork BBQ is the best 4th of July food! Glad that it seems you are feeling better and able to get out of the house!

    I don’t know what it is about dogs and watermelon. Our dog is the same way. We gave her a rind once and she went crazy. As sweet of a dog that she is, she actually GROWLED at us when we tried to take it away. Which, I can understand…I mean, it is watermelon. Yum 🙂

  9. Those pug pics just cracked me up, such little watermelon fiends. My dogs are both obsessed with carrots – literally above everything else in the world! They can hear someone biting into a raw carrot from about a mile away and come racing down to harass you for it…

  10. My running partner’s dog is the same way about watermelon. Last summer, her husband used to bring watermelon for the whole running group after long runs and their dog would go bonkers over it. She said that when they cut watermelon at home, the dog would try to lick the juice off the counter. Dogs + watermelon = lifelong happiness, I guess.

  12. I LOVE the pictures of the pugs. Especially seeing that little pug in a life jacket. He was probably so embarrassed haha! 😉

    Hope your 10k went well this morning!! I’m doing my 1st in September, and I’m really looking forward to it!
