I'm Tina

I’m the owner of Carrots ‘N’ Cake as well as a Certified Nutrition Coach and Functional Diagnostic Nutrition Practitioner (FDN-P). I use macros and functional nutrition to help women find balance within their diets while achieving their body composition goals.


An in-depth, 4-week reverse dieting course for women who feel like their metabolism has slowed down, think they might have hormonal imbalance and can’t lose weight no matter what they do.

A lot of delicious food came out of my kitchen this year, so I thought it would be fun to highlight some of my favorite recipes from 2011. Some of these recipe were brand new to me this year while others are old standbys that never let me down.

  1. Great list. This year was definitely a breakthrough for me with my gluten free baking. I miss my kitchen lately though since I’m spending so much time studying for my Specialist in Fitness Nutrition Certification and working. I can’t wait to get back at the pots and pans!

  2. There are quite a few recipes on your list I want to make this year including your Mac n cheese with cauliflower and your buffalo chicken pizza. If I am feeling really adventurous, I would like to give spaghetti squash a try!

  3. Can you post a link to your easy banana frozen yogurt recipe? I can’t remember if you add anything to the banana!?

  4. I just realized that I have ALL of the blondie ingredients in my house. Perhaps I should whip some up for breakfast. So dangerous! Looks like a year full of tasty treats. Excited to see what comes out of the kitchen next year!

  5. Can’t tell you how many times I have used your guide for making spaghetti squash. I know its simple but it’s great to have there! Great collection – I’m thinking of making that soy-glazed fish tonight!

  6. Looks delicious! Every recipe of yours I’ve tried this year – especially the workout cookies from your book – has been amazing. I’d love to see your recipe for zucchini fries, but the link appears not to be working. Could you point me in the right direction?

  10. So much eating…so little time! I think I’ve had zucchini fries on my menu for weeks…and I always have zucchini so I’ve really got NO excuse to not make em. 🙂 Thanks for the reminder…
