Hello and happy Friday!
Mal, Murphy, and I are off to Maine today to visit our long lost friends, Dave and Marie. Remember them? We’ve been trying to coordinate a get-together for several months now, but our busy schedules always got in the way, so we are pumped we finally found a weekend that worked for all of us. Dave and Marie have some fun stuff on the agenda for this weekend! I can’t wait!
I’ve been snapping pics of my food here and there over the past week or so, so here’s the next edition of My Eats Lately!
Green juice. Lots of it. This coconut-kale-ginger juice recipe was on Health the other day, and it’s one of my favorites. Additionally, I’ve been enjoying my Everyday Green Juice.
Grilled turkey burger with coconut oil-sautĆĀ©ed spinach with horseradish mustard. This meal was so delicious, I actually stopped, mid-bite, to snap a photo. It needed to be documented. I don’t know if it was the combination of flavors or maybe I was super hungry, but it was sooooooo good.
Honey ham, white cheddar Laughing Cow cheese, and horseradish mustard lettuce wraps. Ever since Cabo, I’ve been really loving lettuce wraps. They’re so easy! Get some meat, cheese, veggies, condiments… and you’re good to go!
Coconut-Baked Carrots with Figs. I already blogged about this recipe, but, eaten as a side dish, the leftovers lasted a long time. It look me a good 4 or 5 days to eat them all.
Skillet Sweet Potato Hash with broccoli, onions, and ground beef. Instead of the usual Skillet Sweet Potato Hash that I make with spinach and ground turkey, I switched up the ingredients with broccoli and onions. I made a huge batch and then Mal and I ate it for two dinners and at least one lunch this past week.
Whole Foods salad bar. Whole Foods is two minutes away, and I’m lazy.
Gluten-free Mint Chocolate Chip Bars. They’re also egg-free and turned out so well! I mean, mint and chocolate together? Forget about it. The recipe will be on Health next week!
No-Bake Almond Joy Cookies. I’ve mentioned these before, right? Umm, yea. I’ve made them at least a half dozen times since I first posted the recipe. I can’t get enough of them!
Apple-Pumpkin Garbanzo Bean Toast with almond butter. Remember this recipe for garbanzo bean bread? Well, I added apple sauce, canned pumpkin, and pumpkin pie spice to it for some sweetness. I didn’t measure anything, so I don’t have a recipe, but it turned out really well, so I’ll definitely make it again and share the recipe with all of you.
Sliced banana with blueberries and almond butter. Easiest breakfast ever.
Mashed parsnips and carrots with ground turkey and chopped spinach. This meal was a ārefrigerator surpriseāĀ and made with a bunch of random leftovers, but it ended up tasting delicious all mixed together.
Cauliflower āriceāĀ with roasted Brussels sprouts and ground beef. I wish this photo was better because it definitely does not do this meal justice. It was so frickin’ good! Here’s a recipe for cauliflower āriceāĀ if you’re interested.
Raw Coconut Nectar. I stumbled upon this fun, new product just yesterday. I used it in some baking last night since I ran out of maple syrup, and it added a wonderful sweetness to my chocolate chip cookies. A little bit definitely goes a long way! This stuff is sweet!

What kind of lettuce do you use for lettuce wraps?
I’m not picky. I usually buy whatever is one sale and/or looks the freshest. I like Boston/Bibb the best, but any variety will do!
All your eats look awesome as usual, and now I’m starving (haven’t eat breakfast yet)!. Those mint chocolate chips sound fab!!!
I cannot even being to tell you how amazing that green juice looks. My craving for greens just skyrocketed!

I’ve also been loving oatmeal with PB and blueberries in the morning. It keeps me full til lunch! And green smoothies with kale or spianch (or both!), can’t get enough of those!

I LOVE banana bread with peanut butter,it’s been my thing lately. And I’ve loved making it without any extra sugar and just allowing the banana to sweeten the bread itself – SOOO good!
Whole Foods salad/hot bar is my favorite place for lunch or dinner – so, so good and a great variety! As far as what I’m eating lately, I tried two new flavors of the new Yoplait Blended Greek Yogurt and really disliked it. I’m a big yogurt fan in general, but for some reason, both of these tasted strangely sweetened – it just was not palatable, in my opinion, at all.

My hubby made me BBQ chicken naan pizza and corn on the cob last night for date night. I wrote down the directions but man it was nice to have a night off from cooking! š
Do you use Nikki’s to make the almond joy cookies? Or plain coconut butter? Maybe if I tried it with Vanilla Cake Batter, I could use less honey?
Just got a bulk order of Nikki’s in at our box, 17 jar order… people are either excited to eat it, or bummed because they didn’t order š
I am kind of panicking because I am going to do the Lurong Challenge (8 week Paleo + WOD challenge) and I can’t see how I am going to survive without grains/potatoes/rice! Thanks for the link to cauliflower rice, I love recipes that make it just a little easier š

I made your No-Bake Almond Joy cookies about 4 times since I found the recipe on Pinterest. They are SO GOOD, I have a hard time not eating the whole dough before they even make it to the fridge š

I’ve been using the coconut nectar, and the only thing I don’t like about it is that it is so darn sticky.
I also add it to my smoothies if I need a little sweetness.
So many good ideas to try – definitely flagged this post for future reference! I’ve been trying to eat more balanced and clean, but with some life stressors, I’ve actually lost my appetite. But I am making sure that the mini-meals I do eat give me the best nutrition punch! I have a CF box lunch date and hair appointment today (can you say ombre!?) and wedding tomorrow, but otherwise I’m hoping to RELAX. A lot has been going on and I think taking time for myself will do wonders. We also have plans to go on a hike tomorrow (!!!!).
I’m almost out of my Nikki’s coco butter too! Need to stock up
OK, more love words for the no-bake almond joy cookies—–so good! May or may not have had them for “dinner” a few Sunday’s ago. I didn’t have coconut butter so I subbed almond butter and they were still fabulous. I’m really getting into experimenting with no-bake treats! Thanks for all the great inspiration!
Enjoy your Maine trip! I’ve always had Maine on my list of places to go. One of these years I want to plan a Fall vacation to the Maine/Vermont area, stay in a B&B, and take in all the Fall colors. š

Lately I’ve been going crazy with the loads of fresh tomatoes we have in our garden! Last night dinner was mushrooms, salad, and toasted bread with tomatoes and garlic. You have to take advantage of them this time of year because they don’t get any better than this.
wow, looks good! i know you are more paleo-esque these days… do you miss bread at all? and/or carbs in general? i just don’t know if i could stomach so much coconut and peanut butter!
What do you mean about missing carbs? I eat plenty of them on a daily basis– beans, bananas, sweet potatoes, spaghetti squash, parnips, carrots, Brussels sprouts…
@Tina: Since starting the Paleo diet, this question drives me a little nuts. Carbs do not = grains. Have you tried banana “soft serve?” It totally fixes my ice cream cravings!
Yessss! Love that stuff! It’s really good with coconut butter drizzled on top and then it gets kind of hard from the coldness. So good!

@Tina: I believe she asked if you missed bread specifically… That’s why I could never go paleo.
Also, how long did you cook the ground beef? It may just be the lighting, but it looks a little raw to me?

I love lettuce wraps! We’ve been eating them at least once a week this whole summer. You can fill them with anything, it’s awesome and easy.
Those no-bake almond joy cookies look amazing. We’re on a strict paleo challenge with our box right now, but after that… I’m coming for them! Lol.

Everything looks tasty! Horseradish mustard is a new favorite. Perfect spice for wraps, salads, etc.
I’ve been enjoying WFM Old World Sprouted Bread for breakfast – toasted and then smothered in almond butter and homemade blueberry fruit spread.
And lots and lots of farmers market veggies.
I love lettuce wraps…especially when I’m too lazy to actually tear the lettuce for salad! As full as my wraps are, I recommend eating them in private š
I’ve been on a BIG red meat kick – cheeseburgers, ground beef, tacos, steak.. You name it. I’m eating it.
I definitely didn’t eat enough greens this week, so I plan to buy a bunch of kale and get in the smoothie making groove again next week. Thanks for the green-spiration š

This all looks so good! I have a question: did you always like green juice, or did it take a little bit of getting used to? I want to like it so bad, but the few times I’ve been able to stomach it, I just did not enjoy it!
I’ve always loved green juice! I guess it depends how you make it. If you think it’s too bitter/bland, try adding apple, lemon, orange, coconut water, and/or fresh ginger to sweeten it up and add some delicious flavor!

You’ve inspired me to work lettuce wraps into next week’s meal plan! I’ve been traveling for work so I’ve been eating not-so-well this week but am excited to get back on track. This weekend I’ve got a fun camping trip on the books, so I’m not sure if that’ll happen. Mmm… s’mores!
Cauliflower rice is 100% awesome..have you tried cauliflower crust pizza??!? I’m sure you must have! Those chocolate chip bars/cookies look great! Totally with you on the lettuce wraps or even better, savoy cabbage! Much sturdier!

Loads of fish in the diet at the moment – I’m obsessed with smoked mackerel. Yup, weird, but healthy at least! I’m off for a much-needed haircut tomorrow but mainly chilling and chores. A quiet weekend, which suits me after lots of busy ones.
