Good morning!!
I’ve really enjoyed writing these weekly recaps of what I have been eating lately. They’re a lot more exciting for me, and, hopefully, you too! With that said, here’s the next edition of My Eats Lately!
Fruit, Squash, and Nut Butter Breakfast Bowl
I’ve been combining pumpkin, butternut squash, or sweet potatoes with sliced banana, fresh berries, and a big scoop of nut butter. It’s the best breakfast””nutritious and satisfying. I love eating this before a morning workout!
Greens & Beans
I actually created this recipe for Health, so I’ll be on News & Views next week. It’s a delicious mix of green veggies (Brussels sprouts, peas, chopped spinach), beans (chickpeas), and a Dijon mustard-maple dressing. Mmm! So good.
Make-Your-Own-Tacos
When I visited my sister and Matthew the other day, my mom and I brought all the fixings for chicken and black bean tacos. There’s nothing better than a good taco, right?
Holy crap, these things are so good. I made a batch on Tuesday afternoon and ate them all by Wednesday night. I frickin’ love them.
Butternut Squash with Green Apple and Bacon
Another delicious, nutritious, and satisfying meal idea! Here’s the recipe:
Ingredients:
- 2 cups frozen butternut squash
- 1 small Granny Smith apple, diced
- 1 tbsp coconut oil
- 1 tbsp honey
- 2 slices of bacon
- cinnamon to taste
Directions:
- Heat coconut oil, butternut squash, apple, cinnamon, and honey in a pan on the stovetop. Cook until butternut squash is no longer frozen and apple is lightly browned.
- Meanwhile, cook bacon (I nuked it in the microwave) and then break it into pieces.
- Put butternut squash mixture in a bowl and top with bacon.
Blue Diamond Rosemary & Black Pepper Almonds
I found these at Target the other day and just had to have them. They’re perfect when a salty craving strikes!
Smoothies
Lots of them! It’s too hot to cook! Here are some of my favorites:
No-Bake, Sweet & Nutty Cookies
I’m all about the no-bake cookie recipes lately. Here’s another delicious one!
Smoked Maple Ham
This is the best deli meat I’ve ever eaten. It tastes like it was just cut from a honey-baked ham at Christmas dinner. I randomly snack on pieces throughout the day or throw it in a wrap. Delicious.
Mini Cinnamon Chocolate Chip Cheesecake
Oh, yes. I made mini cheesecakes with Cinnamon Cream Cheese Spread from The Laughing Cow, and, holy goodness, they are amazing. They don’t require any baking and come in individual-size servings, which is perfect for a little summer treat. The recipe will be on The Laughing Cow blog next week. I’ll be sure to let you guys know!

also avocado toast is my go-to lately. top with a little cheese or an egg. amazing!
@Katherine: Avocado toast topped with an egg and a bit of salt & pepper…best breakfast!!!
@Paige Cunningham: i like the way you think with that salt and pepper.
I love the “greens and beans” idea. I eat lots of greens, and lots of beans…and for some reason rarely combine them. Gonna try that this weekend!
I would never think to try squash with fruit and nut butter for breakfast. sounds like a weird combo but those are usually the most delicious 🙂
So many tasty things in this post, especially your tropical mint smoothie and no bake cookies! Thank you for the inspiration!
Do you have the recipe for Greens and Beans posted? It looks delicious!
It’ll be on Health.com next week! 🙂
@Tina: Thanks! I’ll keep an eye out!
I’ve been in love with Blue Diamond Smokehouse and Habanero BBQ almonds, their coffee almonds with frozen chocolate chips, cucumbers and hummus, Egg Beaters (usually buy store brand) egg whites only with a wedge of light Laughing Cow Garlic and Herb or French Onion, and a sprinkle of dill seasoning, your nut butter cookie for one (with a few chocolate chips of course), and watermelon.
Cherries were on sale this week at a lot of stores so that’ll be on this weeks eats list!
