It’s time for another edition of Monday In Meals where I share what I ate throughout the day. Yesterday was kind of an interesting day of eating because we had quite a few leftovers/foods on their last legs that needed to be used up (roasted sweet potatoes, kale, Bang Bang Buffalo Cauliflower, guacamole, grape tomatoes). I absolutely hate seeing food go to waste, so I did my best to incorporate what we had on-hand into yesterday’s meals, so it was kind of like how we eat at the end of the week versus the beginning of the week. Anyway, here’s my Monday In Meals with a “before” and “after” from Qman’s bedroom revamp!
- Breakfast: Scrambled eggs with roasted potatoes, kale, and ketchup + iced coffee with coconut creamer and collagen
- Post-workout: Protein shake + Pecan Sticky Bun iced coffee
- Lunch: Tuna salad with Bang Bang Buffalo Cauliflower and ranch dressing + half of a Chocolate Chip Cookie Dough LARABAR (aka THE BEST flavor ever)
- Snack: Honey Nut Cheerios with sliced banana and almond milk
- Dinner: Maple Ginger Pork Chops with mashed potatoes and kale (recipe from ButcherBox)
- Dessert: Valentine’s Day sugar cookie
Quinn’s Bedroom Revamp
Ok, so Quinn’s bedroom was a work in progress since we moved into our new house 1.5 years ago. We set it up with all of the essentials… his bed, dresser, a shelf, but then… we never did anything else. In August, I actually snapped the photos below with the intention of them being “before” photos because we were finally going to decorate. Sadly, nothing happen for the next, oooh, 5 months. Whomp whomp.

This past Sunday, however, we finally got our acts together and gave Qman a fun, dinosaur-inspired kid room! What a difference!!

No plans here for V-day, but my dog’s nickname is V (for Vaquita) so I will probably pretend it is V-day for Vaquita-day and give her lots of pup-lovin, lol!!
I was thinking the makeover would be a toddler room. I am still trying to figure out how that will look for my daughter once she moves into a toddler bed. I understand you have to anchor dressers, really aggressively toddler proof, etc.

Nothing special here. Husband has a game tonight but Friday… date night! There better be wine involved.

We have the same goat hamper in our nursery! 🙂 so nice that Quinn has such a big room- ours barely holds a changing table, chair and the crib!
We got a sitter for a Saturday night for the first time everrrrrr! Trying to decide where to go eat in Boston! Suggestions for fairly clean eating out but romantic??

Hey Tina! I love your meal posts, they always give me ideas! Also I was wondering when do u plan on switching Quinn to a toddler bed. Im having a hard time deciding whe. Is the right time. I’m nervous about it!!
Good question! I guess whenever he tries to get out or wants a big boy bed?

my 2-year old is in a “big girl” bed since she could catapult out of the crib. You’re lucky for continued containment. She sleeps in the pull out trundle, which helps.

You really have done an excellent revamp of the room! I really love those prints too, I might try to get crafty and do something similar with my die cut machine! I love the clean feel of the room design 🙂
My son would love this dinosaur theme! This makes me want to get out my craft cutter machine and get busy revamping my kids rooms too! The before and after picture difference is amazing!
