Good morning and a very happy February 1st to you! Holy cow, January toalllllly flew by, right? What a whirlwind month. It was definitely one of the busiest I’ve had in awhile! #MEALPLANMADNESS

I know I’m a little late with my weekly Monday In Meals post, where I share what I ate throughout the day, but it coincides perfectly with the first day of February, so, hey, it’s a great time to share CNC’s most popular blog posts in January. These posts are the ones that were most shared on social media, so I figured if you missed them the first time around, you might want to check them out now since so many readers enjoyed them. Ok, here we go… Monday In Meals first and then CNC’s most popular posts in January!




  • 1/2 cup smooth peanut butter
  • 1/2 small avocado, ripe 
  • 1 egg
  • 3/4 cup sugar
  • cinnamon and/or vanilla extract to taste (optional)

Directions: Preheat oven to 350 degrees F. Combine ingredients in food processor or mixing bowl. Form disks with batter on parchment paper on a cooking sheet. Bake for 10 minutes.

Makes 12 cookies

How was your January? Any highlights to share?



  1. Shredded coconut is my jam right now. Maybe it’s the touch of summer in the midst of our cold winter.
    Did the avocado cookies bake up and set? It seems like they’d stay fairly soft.

  2. I’m so happy January is over! I’m safely into my second trimester and can say good bye to food aversions, nausea and tiredness! It was such a tough month, especially when taking care of a 2 year old and having the norovirus run through our home! Cheers to being that much closer to Spring in New England. Hoping for a fast, snowless and healthy February!

  3. Can you recommend a healthy ranch dressing or a homemade recipe? I loveeeee ranch but I’m trying to cut out naughty dressings and I don’t love the Tessamae’s brand even tho it’s very much made with real food. Thx!

  4. January was a pretty good month! I’ve been back on the flexible dieting train and managed to track every single day in January. Normally I’d find an excuse not to (aka, an excuse to have a free for all day), but this month I didn’t. I stuck to my plan but still had plenty of good treats here and there.

  5. I’ve tried so many new recipes in January. I’m not one for New Year resolutions but I think I’ve inadvertently taken one on! New food and I’m really enjoying it. Your site is a great source of reference for me, so many fab recipes. Thanks
