Hi, guys! Happy Hump Day!
Here’s the next edition of Monday In Meals, which just happens to be a “special” edition because I didn’t have very much food prepped for the week. I was out-of-town and didn’t get my act together until late in the day on Monday… well, yesterday… sort of. I’m leaving for San Diego tomorrow afternoon, so I only did a little prep because I’m fairly positive Mal and Quinn will order take-out/go out to a restaurant/wing it/not eat while I’m away.
Anyway, here’s a recap of what I ate throughout the day on Monday when I didn’t meal prep. You’ll see that my food is not “curated.” These Monday In Meal posts are ACTUALLY what I eat throughout the day, both good and bad. I also include some staples that I like to have in my kitchen when I’m unprepared and need a healthy meal ASAP. Would love to hear your favorites, too! 🙂
- Breakfast: Scrambled eggs with leftover broccoli rice + iced coffee mixed with Dandy Blend, coconut creamer, and collagen + half of a glazed donut
- Snack: Bread from Not Your Average Joe’s with dipping oil
- Lunch: Thinly-sliced beef with bacon, roasted sweet potatoes, broccoli florets, and the rest of the broccoli rice + a Beauty Burst
- Dinner: Ground chicken with roasted sweet potatoes, broccoli, and blue cheese crumbles
- Dessert: Fig Bar with cashew butter spread on top
My favorite staples for QUICK & EASY meal prep:
- ground meat (chicken, turkey, sausage, beef) <— cooks fast
- frozen veggies
- frozen shelled edamame
- riced cauliflower or broccoli (both fresh and frozen)
- canned tuna or salmon
- eggs and liquid egg whites
- high-protein pasta
- sweet potatoes/potatoes <— a big batch of roasted potatoes will go in all sorts of meals throughout the week
- buffalo sauce
- avocado or guacamole
- hummus
- silicone non-stick baking mats <— not food, but life-changing for quick prep!

I like those fig bars! I have them at work- super good and love how you topped it with some nut butter goodness. My staples are cauliflower rice, peanut butter, eggs and jerky 🙂
Your meals still look great even without too much prep! I like to have hard boiled eggs, soup, and tuna in the fridge for easy grab and go meals. I also love raw veggies so I’ll always snack on those

That fig bar looks yummy! My go to’s when we’re low on groceries are definitely eggs and “burrito bowls” (rice and beans with avocado, salsa, corn…whatever random toppings we have!)
I think freezer staples are so helpful during busy weeks. You can keep fish and frozen veggies in there for a quick meal. I tell my clients this all the time. Quick, easy meal for not much money, time or effort!
Frozen veggies, microwave rice and frozen chicken sausage are my go-to’s! And maybe an Annie’s mac and cheese box every now and then too 🙂
OH my gosh, I love those fig bars! I came across them in an airport once and now they’re one of my favorite airport snacks, when combined with jerky or peanut butter for protein.
We almost always have Trader Joe’s pulled BBQ chicken on hand for those days when it’s too crazy to do anything else. That, and chicken nuggets because I will always love chicken nuggets.
Frozen veggies for sure, tofu (so easy to heat up with some soy sauce!), rice (we always have a container in the fridge of pre-made rice), and peanut butter. Basically, we can make a kick-ass peanut sauce stir fry quick and easy if we have nothing else on hand 🙂
those fig bars are my FAVE! they sound even better with a smear of nut butter on top, too!
my go-to meal prep when i have time or not is making a big batch of quinoa and chopping up some veggies to have in it or just with hummus. and fruit! i buy lots of whole fruit since that requires no prep at all 🙂
How do you keep your roasted potatoes from getting soggy/greasy/mushy throughout the week? Maybe we don’t go through ours quickly enough, but they always end up with that nasty white grease layer on them, and I don’t use much oil to cook them!
I only use a tiny bit of oil and a non-stick silicone sheet, so they don’t get soggy.
I hoard cauliflower rice from Trader Joe’s so that I can use it any time!
