I’m so glad you guys are liking my Monday In Meals posts! They’re fun to write and keep me accountable (so I don’t eat 500 bowls of cereal for dinner), so they might just become a regular/weekly feature on CNC. And, with that, here’s the next edition!

Omelette made with 2 eggs, 1 egg white, broccoli florets, and nutritional yeast + buttered toast + iced coffee with soy milk

Healthy Peanut Butter Chocolate Chip Oatmeal Cookies

Ingredients:

Directions:

Preheat oven to 350*F, combine ingredients in a mixing bowl, use a tablespoon to portion batter onto a prepared baking sheet (or use parchment paper), bake for 10-12 minutes, remove from oven and enjoy!

Makes 9 cookies

  1. Lately I’ve been all about smoothies for breakfast. I prep them at night and then blend away in the morning. Frosted shredded mini wheats are my favorite!

  2. I have the same thing for breakfast every morning: steel cut oats (I make a big batch in the slow cooker and reheat 1 cup at a time) plus a little shredded cheddar cheese, salsa and avocado.

    What type of oats did you use in the cookies? Quick or old fashioned?

  3. Yesterday I had a bagel with honey walnut cream cheese. I never keep bagels in the house because I feel like they provide no nutritional value, but I had them from a play date I hosted so I enjoyed. 🙂

  4. I’ve had the same breakfast most days for the past 20 years: Muesli, plain yoghurt, cinnamon and berries… I don’t think I’ll ever get tired of it – it keeps me full till lunchtime, is healthy and balanced. Love it!

  5. I’m hit or miss with breakfast. Sometimes I’ll have a big hearty egg casserole and other times I’ll just have fruit. Yesterday I just had a banana and 2 clementines. I also quit coffee, so I’ve been enjoying a lot of tea lately.

  6. Yesterday I had two drippy eggs over a bed of sautéed kale and mushrooms. Of course I had an apple on the side. I have been loving loading my breakfast with a whole bunch of veggies lately. Love those healthy no-bake cookies. YUM!

  7. Yesterday’s breakfast was a yummy smoothie bowl! Even though we were experiencing a huge snow storm, I was craving something cold for breakfast!

    Couldn’t tell you the last time that I had cereal for breakfast. But, as an evening snack I do enjoy some cereal mix with greek yogurt!

  8. I had your crockpot oatmeal (made with milk!) with blueberries, 1/2 banana, and chia seeds mixed in. 🙂

  9. Breakfast was Trader Joe’s raisin bran (my favorite cereal ever), hemp hearts, and TJ’s crunchy almond butter with whole milk. My current favorite combo.

    We eat cereal for dinner rarely, but, since we have a toddler, we eat very early and then by the time bedtime rolls around (10pm), we both have a little cereal for a snack almost nightly, ha.

  10. Yesterday I had roasted red potatoes (leftovers), over easy egg, and a slice of Irish soda bread with butter for breakfast – so good! I also bought those Peanut Butter Puffins and I’m always snacking on them! And I love your parm crisp photo with crumbs left where you wrote “almost the end” because no crumbs get left behind, lol

  11. Call me crazy, but I am just not a cereal fan and neither is my husband. I don’t know the last time we even had a box of cereal in our house! I have been loving overnight oats and green smoothies for breakfast lately!

    Yesterday I had two fried eggs with some melted muenster cheese on top and a slice of turkey bacon.

  13. I never eat cereal. I just don’t like it. I do occasionally eat oatmeal. I love eggs. Yesterday, though, I had leftover hamburger salad for breakfast. Hey it happens.

  14. Yummy meals! Thanks for sharing the cookie recipe – always glad for new, easy but healthier snacks like that one!

    Breakfast this morning: sweet potato “toasts” + eggs + fruit. I used a white sweet potato as a twist on the usual orange one and LOVE it.

    And cereal for dinner… not sure when I’ve had it for dinner last but I love having a little bowl for cereal. Because of St. Patrick’s Day, we had fun and got Lucky Charms so I had some for a snack last night 😉
