(That’s pretty much word-for-word what I said to Murphy before his walk this afternoon. I talk to him a lot.)
Snack
On my way out the door to walk Murphy, I grabbed a handful of almonds to snack on. I planned to make dinner as soon as I returned home, but I wanted a little something to munch on.
On my pug walks lately, I’ve been listening to the Balanced Bites podcasts, which focus on “a practical approach to holistic and Paleo nutrition with a healthy dose of humor.” They’re hosted by Diane Sanfilippo (of Balanced Bites and author of Practical Paleo) and Liz Wolfe (of Cave Girl Eats). I’ve only listened to two so far, but I like them a lot, and I’m learning a ton!
The podcast I finished this morning was with Chris Kresser and talked about small intestinal bacterial overgrowth (SIBO), maintaining healthy gut flora, and the best nutritional approaches for healing the gut and proper digestion. It was all very interesting and my gut needs healing in a bad way, so I’m going to try a couple of things that they suggested, including bone broth. Bone tea? Ooh, boy! Accept and adjust and heal my gut!
Dinner
After my walk with Murphy, I came home and threw together a quick Cobb Salad (minus the bacon) for dinner.
After dinner, I had a craving for something sweet, specifically a cookie, so I whipped up one in the microwave using just 5 ingredients.
OMG, it turned out so well””moist, soft, and delicious!
Yum!!!
And, of course, you can get all crazy with this recipe and add chocolate chips, raisins, flavored extracts, etc.
Microwaveable Nut Butter Cookie for One
Ingredients:
- 2 tbsp nut butter
- 2 tbsp liquid egg whites
- 1-2 tsp honey
- 1/4 tsp baking powder
- 1/8 tsp cinnamon
Directions: Coat a microwaveable-safe bowl with nonstick cooking spray. Then, combine all of the ingredients in the bowl and mix well. Microwave for 60 seconds. Enjoy!

I was skeptical at first, but I made the cookie recipe and it came out FANTASTIC! Thank you, thank you, thank you for this recipe. I have a bad sweet tooth and this is recipe will really satisfy me when I am craving a cookie. Btw, I added about a table spoon of dark chocolate chips and it seriously tasted like a chocolate chip cookie! YAY 🙂
