After my tour of the Hawaii Prince Hotel, I met Mal at the beach, which was just a short walk from the hotel.
We went swimming and worked on our tans for about an hour before we started to get hungry for lunch.
There were a bunch of bars and restaurants along the water, so we walked up the strip to check out the dining options. Our only requirement for lunch: outdoor seating. Us folks from the Northeast are easy to please!
We eventually decided on Tropics Bar & Grill, which had a nice-looking patio and a bunch of tasty options on the menu.
There was about a 15 minute wait for a table, so Mal and I headed over to the bar to get a drink.
When I sat down, the bartender handed me a drink menu, which was filled with pages and pages of colorful drink options. There were all sorts of usual cocktails and drinks to choose from!
After much debate (seriously, I spent a good 5 minutes trying to pick the best option), I went with the Lychee Acai Cooler, which was made with Absolut Berri Acai Vodka, Funkin Lychee Puree, Sprite, and Sweet n Sour mix.
It sounded like the most “tropical” option and, boy, was it delicious! It sort of reminded me of a sweet and sour peach ring gummy candy. Yum!
A little while later, our table was ready and we scored a great spot overlooking the beach.
Fresh lychee? Delicious!
Life is good.
For lunch, I ordered the Coconut Crusted Shrimp, which came with a housemade hot pepper jelly. Loved it.

What’s your favorite “tropical” cocktail?
Mine: Skinny Piña Colada, Blue Crush from the Wynn Hotel in Las Vegas (I drank like 10 of them in 4 days), and now the Lychee Acai Cooler.
