I’m the owner of Carrots ‘N’ Cake as well as a Certified Nutrition Coach and Functional Diagnostic Nutrition Practitioner (FDN-P). I use macros and functional nutrition to help women find balance within their diets while achieving their body composition goals.


An in-depth, 4-week reverse dieting course for women who feel like their metabolism has slowed down, think they might have hormonal imbalance and can’t lose weight no matter what they do.

When Mal woke up this morning, the first thing he said was “Let’s make pancakes!” I bet he dreamed about them last night!

Pancakes sounded great to me, so Mal designated breakfast-making duties: he cooked pancakes; I made iced lattes. However, our pancake plan was soon foiled when we realized that we were out of pancake mix. 😕 What a bummer.

Mal and I both still wanted pancakes for breakfast, so he offered to run across the street to the convenience store to buy a box of Bisquick.


Disaster diverted!


Or so we thought…

While Mal mixed the pancake batter, we enjoyed our iced iced lattes while hanging out in the kitchen.

Like most mornings, we planned our day. I’m heading downtown to Healthworks for a workout and then to do some writing. Mal is showing our apartment to some more prospective renters (and then probably playing video games).


While we chatted, Mal started to make our pancakes on The Griddler. They looked so delicious– I couldn’t wait to eat them. I was starving!


But, then we realized that we didn’t have any maple syrup! Gah!


So, this time, I ran across the street to buy maple syrup.


Not surprisingly, there weren’t many choices. I went with the Aunt Jemima’s.


(When we move, I’m definitely going to miss the convenience of living in a city!)

Mal’s pancakes turned out EXCELLENT! This batch was one of his best ever. The pancakes were so soft and fluffy– they reminded me of cupcakes! 😀




I practically licked my plate clean. 😉

  2. That’s what I love about cities! The proximity to things! Everything you need is at your fingertips!
    I’m not a huge fan of bisquick pancakes though for some reason I think they taste salty.

  3. Yum, it was a pancake morning for me too! I made mine using coconut flour and flaxmeal/brown rice protein powder instead of pancake mix and add chopped walnuts and blueberries, it was delicious!

  4. glad you got your pancakes! 🙂 Ellie Krieger’s recipe for whole wheat pancakes is SO good – you should try them next time. They’re super easy, and I’ve switched out the buttermilk for regular milk, almond milk, and yogurt at different times when I didn’t have buttermilk in the house. So tasty!

  5. Those are pretty pancakes. I miss the Bisquick days. Nowadays it’s all Hodgson Mill multigrain and buckwheat, which I love for the texture, but some times you just want the good ol’ white salty fluff of childhood.

  7. Don’t you just love that about living in the city? I used to live next door to 7-11 so I could always run there quickly when I didn’t have something I needed.

  8. You know you could always make pancakes from scratch. All you need is flour, salt, sugar and a little baking soda. And you can even make syrup from scratch. I used to make it out of dried berries, a little brown sugar and water in a sauce pan on the stove. Once the sugar is liquid remove from the heat add a drop of vanilla extract and let it cool just a bit. It may not be maple syrup, but it is pretty delicious on homemade pancakes.

  9. So i’m thinking that Mal should do a guest post on how he makes his pancakes so incredible… they look SO good!!!!!! And what a morning you had, that must be so convenient being able to simply go across the street if you need something!!
