The nice folks over at The Lazy Baker sent me a wonderful package of their Cookie Mix… WEEKS ago! 😳

I received the package just days before living with our friends, so with the craziness of moving, it got packed in a box and forgotten about until the other day. Tonight, I finally had a free night at home, so it was definitely time for some (lazy) baking.

The Lazy Baker’s mission is “To help individuals discover their inner baker through the art of lazy baking: a fun, simple and contemporary approach that doesn’t sacrifice quality, taste or your time.” Sounds like my type of baking! 😉

I received the Oatmeal Cherry Raisin Spice cookie mix, which is made with all-natural ingredients.

The Lazy Baker cookies took just minutes to prepare and I only needed to add 3 ingredients to the mix: butter, an egg, and vanilla extract.

Now, don’t get me wrong, these cookies were delicious and SO easy to make, but by adding just a few more ingredients, you could make your very own homemade cookies from scratch without the help of a mix.

I always try to “healthify” recipes whenever possible, and The Lazy Baker cookie mix was no different.

I added an egg and vanilla extra like the recipe called for, but I replaced half of the butter with canola oil. It may have changed the consistency and taste of the cookies, but I still liked them a lot!

The Oatmeal Cherry Raisin Spice cookies did not disappoint! They were a little on the crunchy side, which was probably from decreasing the amount of butter, but the flavor was right on. Very yummy! 😀

The Lazy Baker cookies really tasted homemade, but without all of those weird/processed ingredients like most packaged baking brands have in them. I especially liked the fact that the Oatmeal Cherry Raisin cookies had fiber (oatmeal) and antioxidants (dried cherries) in them.
