Mastermind Weekend 1/16

I’m the owner of Carrots β€˜N’ Cake as well as a Certified Nutrition Coach and Functional Diagnostic Nutrition Practitioner (FDN-P). I use macros and functional nutrition to help women find balance within their diets while achieving their body composition goals.


An in-depth, 4-week reverse dieting course for women who feel like their metabolism has slowed down, think they might have hormonal imbalance and can’t lose weight no matter what they do.

What the heck have I been doing all day?!? I’ve barely accomplished anything from my To Do list. πŸ˜• I guess that’s what happens when you sleep the morning away and then screw around on the internet for a few hours. Blah. I am totally lacking focus today.


I “worked” until about 12:30 before breaking for lunch. For some reason, my breakfast didn’t hold me over like it normally does. I wanted to eat lunch earlier, but I ended up getting distracted (by Twitter, online shopping, etc.) and worked until my stomach started to really grumble.


Today’s lunch was a big salad with lots of veggies, KooLoos, and balsamic vinegar drizzled on top.


In the mix: romaine, tomatoes, cucumbers, mushrooms, celery, red bell peppers, and carrots.



On the side, I had a toasted Sandwich Thin with melted cheese.



After lunch, I had a serious sweet tooth! It must be (Cookie) Friday! πŸ˜‰

First, I had a Blueberry Coconut Bar.


Then, I made some Almond Joy “Ice Cream.” This time, however, I changed the recipe:

  • 1 frozen banana
  • 2 tbsp coconut flour
  • Splash of vanilla soy milk
  • Shredded coconut
  • Almonds
  • Chocolate

This batch was REALLY good! It was so much better than the original recipe! Holy YUM! I actually might like this version of “ice cream” more than the real deal.


Even though I didn’t get a lot done today, I managed to write most of my Health post instead of saving it for Sunday night like I usually do– so, that’s definitely a win for me! πŸ˜€

Murphy and I are off to have puppy playtime with Bella and Grady while Marie and I enjoy Happy Hour. Yay for Friday! :mrgreen:

  1. LOVE that massive salad! and a sandwich thin with cheese is the perfect side for that or soup…yum! hope you guys have fun at the puppy play date! we’re getting in one more day of skiing tomorrow and the resting on sunday πŸ™‚

    Maybe your breakfast didn’t hold you over as much cos you were really hungry when you ate it? I find the hungrier I am when I eat a meal, no matter how filling it is, I’m more likely to be hungry sooner:s

    Exciting plans for the weekend = Easter egg painting, a massage with my cousin, and a movie & wine night with the most recent dating prospect! Oh! And bingo on Sunday πŸ™‚ Happy Friday, Tina!

  6. I keep picking up coconut flour and putting it down at the grocery store. I think I officially need to drop the indecisiveness and buy it already!

    Puppy play time and Happy Hour?! NOTHING sounds better than that right now! Have fun!

    I have a girl’s night planned for tomorrow at a really fun wine bar (www.epistrophycafe.com) and I can’t wait! Tonight is pizza night with the boyfriend πŸ™‚

  8. i’m excited for the weekend–should be a good mix of work and play. i defend my thesis early next week, so there will be some major preparation involved plus some other school stuff. but i am also going to a concert with my boyfriend tonight and tomorrow night we have a dinner and movie night planned with my best friend and her boyfriend.

    Dinner with friends tonight and tomorrow and a hockey game on Sunday. Other than that, just resting up for VEGAS next weekend!!!

  10. See/ you did get things done! Amazing ice cream recipes, for starters! It does look good… butI must say I had four different kinds of gelato here in Florence, on the first day of my week here, and it was pretty darn good too… πŸ˜›

  11. That “ice cream” looks and sounds INCREDIBLE — well worth making this summer! It’s my last weekend on New Zealand’s south island so fingers crossed, the weather will be nice enough to walk around and maybe bike out onto the Otago Peninsula. Then it’s up to the north island.

    This weekend hubby and I are going to run at the state park (I’m new to running, this will only be my 4th time running outside) and we’ll probably do some shopping and stuff around the house then we have spin class on Sunday. Good times!

  13. I am totally in the same boat as you today. I am totally unfocused and highly unproductive. I managed to accomplish the absolutely necessary things, but I still feel like I’ve done absolutely nothing.

    I’ve got a pretty lengthy to-do list this weekend, but not any “real’ plans. My main goal is to buy a filing cabinet and organize my giant box of important papers into some kind of legitimate filing system. Sounds painfully exciting doesn’t it?

  14. i have a big meal planned for the weekend! get ready for this: (my mom is cooking it) filet mignon and asparagus topped with a bernaise sauce. alaskan king crab legs. roasted potatos. arugula salad topped with parmesan cheese.

    i love that you make ice cream. so creative!

  17. I’m a bum today, too! “Working” from home today has also meant online shopping and reading blogs for too long. Like Anna, I won’t join Twitter or Facebook *ever*- I don’t have the desire to, anyway, but I also don’t need anymore nonsensical distractions πŸ˜‰

  18. I don’t know what I’m in love with more, the almond joy ice cream or the blueberry coconut bar. I’m definitely going to be closely following your treats and desserts for healthier and more wholesome sweet options.

    My weekend includes a nice long, outdoor run, Netflix catch-up, and seeing the movie “Greenberg.”

  19. I’m having a day like that too!! I’m supposed to be doing a Chemistry lab report but somehow I ended up here…..

    I must try your Almond Joy Ice Cream!!! This weekend I’m attempting to make samosas, studying, and having fun every possible moment I can!!

  20. I did the frozen banana ice cream for the first time a couple of weeks ago and fell in love with it. I want to do the coconut version for my husband…huge coconut fan…I think he will love it! Have fun outside. We plan on doing that as much as possible this weekend!!!

  21. I left this on the Nuval blog too, but felt I had to share with you: I did my first real β€œtrade up” today! I normally buy things that are cheap and low in calories and fat. Boy has Nuval changed my thoughts on that. I’ve been reading for a while now and feel like I finally know a little bit about my choices, where I was making good ones, and where I may have been falling under. However, I live in Philadelphia and shop in a wholesale warehouse market due to finances. Needless to say, the Nuval scores aren’t listed, so I read as much as I can on here and other blogs to β€œresearch” my shopping list. Today, I took the plunge and traded Dannon Light’n’Fit yogurt for Chobani Greek Yogurt, which I believe is quite the hefty jump in terms of ratings. The calorie jump scares me, but I’m putting my faith in this new system! The rest of my cart consisted of fruits, veggies, hummus, organic milk for my boyfriend, pizza (I know, not good for you but it’s cheaper than ordering pizza), Morning Star veggie patties, and Nature Valley Granola Bars. My next trade up might just be Nature Valley for Larabars. I just wish I could find a coupon for those! Anyway, thanks for all the help so far, Nuval!

  22. I had a great a.m. bike ride, then was totally unmotivated after that so I wasted away my day until it was time to go with DH to our last spring training game (Orioles vs. Twins). Tomorrow is run and wts., then maybe an outdoor lounge/street cocktail event. Hope you have a great weekend!
