The gym was so busy this morning!! I totally forgot about the January Joiners. Luckily, I snagged an elliptical right away and peddled along for 40 minutes without incident. I listened to music and caught up with this month’s Real Simple magazine. It was a nice, little workout.
I ate breakfast much earlier than usual this morning, so, not surprisingly, I was hungry for lunch by 11:00. (Five hours is typically my max between meals.)
As soon as I got home from the gym, I start to make lunch, which came together in about 10 minutes. Love that!
I reheated some honey-roasted root vegetables.
Melted cheddar cheese on half of an Iggy’s roll and sliced up an apple.
I rounded out the meal with a container of Chobani and some water in my Sigg.
So, I’m really starting to enjoy lunch. Breakfast is still my favorite meal of the day, but lunch is working its way up the list.
Now that I’m really trying to plan well-balanced meals, lunch is a lot more fun for me. I guess I never knew what to make, so I didn’t look forward to my second meal of the day. But, now I want to make (and, of course, eat) lunch. Mixing and matching foods (flavors, colors, and textures) is the best part!
