I'm Tina

I’m the owner of Carrots ‘N’ Cake as well as a Certified Nutrition Coach and Functional Diagnostic Nutrition Practitioner (FDN-P). I use macros and functional nutrition to help women find balance within their diets while achieving their body composition goals.


An in-depth, 4-week reverse dieting course for women who feel like their metabolism has slowed down, think they might have hormonal imbalance and can’t lose weight no matter what they do.

Before leaving for the gym this morning, I just had to laugh at how much food I had packed for the day:

I even had to use a separate bag because it all wouldn’t fit into my regular bag. When I exercise before work, I pack breakfast, lunch, and a snack, so I guess it just adds up! Plus, I’d rather have healthy options on-hand than seek out the vending machine later.

I ate breakfast at my desk this morning. I was famished, so I basically devoured it!

I had pineapple Chobani with Kashi Go Lean Crunch, a banana, and lots of H20 to rehydrate after my training session this morning.


I love, love, love the pineapple flavor! :mrgreen:



I dug into my lunch promptly at noon– my stomach had already been growling for at least an hour. I’m a hungry girl today!

The “main course” of lunch today was leftover Mediterranean Salad from Sunday night. The flavor definitely intensified from sitting in the fridge for a couple of days. Sorry that it’s not a pretty picture, but I promise it tasted delicious!


Of course, lunch needed to end with something sweet, so I had a strawberry flavor Fruition bar. Very fruity, very yummy! 😀


My afternoon snack is an apple and some dried apricots. I kept my snack lighter than usual today because Mal and I are treating our friends, Dave and Marie, to dinner at a nice restaurant in Boston as a thank you for letting us stay with them for 2 weeks. It was a lot to ask of friends, but they were incredibly hospitable and helped us out a ton! I don’t know what we would have done without them!

  1. Delicious loot you got there! I don’t think that’s too much food at all, your body needs the yummy energy for all of your activity through the day.

    Still, I think you should suggest that the big people at lunchbox central should build larger ones. You never know 😉

  2. I only just tried the Chobani yogurts this week because I have seen them on your blog. OMG!!! They are delicious. I had strawberry yesterday and blueberry today. I am addicted already!!

  3. I always packed a lot when I went to work, too, because a lot of my eats just aren’t as high in calories and didn’t fill me up as much, so I needed more.

  4. You eats sound a lot like mine. I started the day with PB Banana Flax oats – your recipe! Packed for snacks/lunch?
    1 cup total cereal
    1 cup peanut butter puffins
    a honeycrisp apple
    Chobani Blueberry yogurt – I so wish I could find your flavors!
    A mixed organic green salad with beets, zucchini, roasted corn, garbanzo beans, goat cheese and Trader Joes Tuscan Italian Balsamic dressing.

    It gives me the energy to get through my day!
