It’s a beautiful fall day here in Massachusetts!

Best season ever.

Breakfast

I woke up craving peanut butter this morning, so I whipped up a Sweet Breakfast Scramble with canned pumpkin and added a massive scoop of Teddie peanut butter to it… and then went back for an equally huge second scoop.

I also drank””not one””but two glasses of coconut-flavored Dandy Blend with breakfast.

After making pumpkin spice Dandy Blend the other day, I gave coconut a try this morning and it turned out awesome. I just added a few teaspoons of coconut extract to my Dandy Blend when I mixed it up. Mmm! So, so, so good!

Lunch

A few hour later, it was lunchtime. On the menu was leftovers from last night’s dinner””steak, roasted broccoli, onions, and red potatoes””but with some avocado in the mix for some healthy fat. Let’s hope this combo does the trick!

Speaking of potatoes, I was recently asked by the National Potato Board to be one of their judges for the Ultimate Potato Recipe Contest with Better Homes & Gardens. Eat delicious potato recipes and pick my favorite?   1. My new favorite way to eat potatoes is smushed and roasted. You boil the potatoes until their soft, squish them down on a cookie sheet, brush them in olive oil, coat with seasonings, and then roast until crispy. My husband refers to them as potato cookies…SO GOOD!

  2. I love this! I grew up next to the county that is the highest potato producing county in the US!

    My favorite way to eat potatoes is nice and simple, baked, with salt and barbeque sauce! Actually I already had plans to have one with dinner hehe!

    I’m a huge sweet potato fan, whether they are roasted, baked or even microwaved. And some think I’m weird but I LOVE peanut butter or almond butter (+ cinnamon) on my sweet potatoes!

  4. Potatoes are my favorite food! How did I not know there was a national board dedicated to them!? I feel like I’m slacking on my devotion! Honestly it depends on what mood I’m in. Fried, baked, hashed, MASHED! (Childhood favorite) its really impossible to choose the best way to devour these except from fork to mouth!

  5. I am a sweet potato fanatic. I love roasting them in the oven with a little olive oil, salt and pepper. Or, baking some sweet potato wedges and topping with almond butter or sunflower butter – yum — definitely got this idea from your blog. Keep the sweet potato recipes/ideas/pairings coming!

  6. I am curious about the Dandy Blend. Does it have a coffee-ish taste to it? Also, can you drink hot as well or only as an iced beverage?

    I love potatoes but I am hardly creative with them. I will leave that contest to a more talented cook in the kitchen.

  7. In un-potato news, I’ve been making my own coconut milk at home. I blend 1/4 cup unsweetened coconut with 1-2 cups of water; strain through cheesecloth and repeat. Since there are no additives, it does separate a bit but you can either re-blend it, or use the solid coconut fat for cooking and recipes. You can also use the leftover coconut that you’ve strained to add your sweet breakfast scramble, on pancakes, or in muffins.I think it tastes even better than the store bought stuff and it’s wicked cheap.

  8. Tina, how do you get your sweet breakfast scramble so creamy and mushy? I attempted to make it this morning with a regular banana, canned pumpkin, and only egg whites (I didn’t have any real eggs on hand), and it tasted good, but seemed kind of runny and didn’t look like the same consistency as your photos. Any words of advice? Thanks! And please keep your amazing, easy recipes coming!

    1. I use coconut oil to cook it. Maybe that’s the secret? What do you use? I usually do 1 regular mashed banana, a big scoop of pumpkin, 1 egg, and 2 egg whites with cinnamon and pumpkin pie spice. Make sure you REALLY mix it all together. I think the banana helps it all bind together.

  9. Potato, rosemary, cream cheese and sea salt pizza. Probably not of interest to someone on the paleo diet, but delicious! 🙂

  10. Lucky you! I cannot think of a much better contest to judge than a potato one (besides desserts). I absolutely love potatoes in any shape or form. My favorites would have to be roasted red potatoes with anything mixed in but always garlic, or baked. Wow, now you got me craving some potatoes!

      1. @Tina: Oh, ok. So you weren’t really on it to begin with. I’d change my diet, too if I had people paying me to eat/judge something, also.

        1. I said in the very beginning I wasn’t being super strict with the Paleo Challenge. I’ve also been eating peanut butter, eating cake, and drinking wine the entire time. Maybe you missed those posts?

  11. MMM – even though I try not to eat TOO many potatoes, I love a good red skin potato roasted with extra virgin olive oil, rosemary, and freshly ground sea salt

    simple, delicious !

  12. wow what a fun contest!! gahhhh the second you said “potato” my mouth watered and I started craving some chunky, creamy/garlicky mashed potatoes. I’ll def. check that contest out too! Thank you Tina.

  13. are potatoes paleo or are you done with the challenge already? If so, are you going to give up the dandy blend and go back to regular coffee? I know people who avoid coffee for a variety of reasons, but no offense, the dandy blend stuff doesn’t seem that appealing.

  14. Would you consider doing a post on any changes you’ve noticed(physically and/or emotionally) since changing your diet?
