I'm Tina

I’m the owner of Carrots ‘N’ Cake as well as a Certified Nutrition Coach and Functional Diagnostic Nutrition Practitioner (FDN-P). I use macros and functional nutrition to help women find balance within their diets while achieving their body composition goals.


An in-depth, 4-week reverse dieting course for women who feel like their metabolism has slowed down, think they might have hormonal imbalance and can’t lose weight no matter what they do.

Remember when Chandra and Monica came to visit me back in early March? We explored Boston, drank MarTINAs, baked Matt Damon Cookies, and ran a 10-mile race. It was sweet, and I had a lot of fun!

Before their arrival, I spent a lot of time “prettying” our house. Monica and Chandra were our very first overnight guests, so I wanted the place to look fabulous for them. There were a bunch of projects around the house that I started (like my office), but never finished, so I wanted to complete them before they arrived. Even though I finished a few projects, I didn’t get to them all (like my office).

Since early February, a bunch of frames and prints have sat on the floor of my office. I’ve been meaning to hang them, but I just never had a chance… until today! Go me!!

Today’s eats weren’t very exciting”” more bland food. For lunch, I ate chicken noodle soup, M&Ms, and Popchips. All were delicious and mostly agreed with my stomach.

For dinner, I once again ate Ramen noodles, but this time, I added chunks of broiled chicken breast. Last night, I ended up waking up in the middle of the night with a growling stomach, so I knew tonight’s dinner needed some more substance.

Ulcerative Colitis: A Song

It seems like quite a few of you guys struggle with GI issues too, so I thought you might appreciate this video. It’s funny in the beginning, and it pretty much sums up my colitis experience– right down to the insane medical bills that I have to pay!

  2. Can someone please explain to this Canadian how much treatment for this kind of thing and the pills cost? I’m really curious since with universal healthcare we’re never really aware of the costs. Also, don’t most employers offer insurance that cover medication costs in the United States? Where I live you have a minimum of 70% of your medication costs covered and quite a few people have a 100% coverage of medication.

    1. @Nancy: Hi Nancy, Back when my husband and I both worked for major corporations, we were unaware of the cost of our healthcare and prescriptions too. We had great insurance provided through our companies. But in the US, if you are self-employed or employed by a small company then health insurance can cost quite a bit — and doesn’t provide as much coverage so you end up paying for quite a bit of it “out of pocket”. It’s one of the most heated debates in this country. Sad, but true. Prescription costs can be huge, and many people go across the border to get prescription medications (Mexico and Canada) but that doesn’t work for many medications.

My best advice for dealing with the tummy troubles is to never give up on figuring it out, hold your head high, and keep it in perspective because you’re still healthy, you just have a little something to figure out(!) — hugs to you as you deal with it; I know hard hard it can be! xoxo

  9. I love your prints! I have been searching for one I saw that says “Coffee; you can sleep when you’re dead!” I think I have to go to the Made In America store to get it; that’s where a friend of mine got it. Keep positive about the GI issues – hey, if nothing else, it gives you extra experiences to blog about!

  10. I just found out a have a severe dairy allergy and also highly sensitive to yeast. It took me over a year and changing doctors before I got this diagnosis. Hopefully, once I’ve cleared my system, the migraines and muscle aches will stop. I feel your pain in your medical struggles.

  13. Just to clarify- did they diagnose you with Colitis or Ulcerative colitis? Because they are a bit different and some people don’t realize that and when they say things like Oh man, my friend has had that for billions of years, they could be scaring the crap out of you (sorry- bad pun, forgive me).

  14. maybe you could still set aside on day a week to eat your fav gluten stuff but go gluten free 6 days a week, that way, you would not feel so deprived of your favs? it stinks i know but perhaps it’s better than all or nothing :/ take care.

  15. Your prints look great! The Holstee Manifesto reminds me of “Everybody’s free (to wear sunscreen).”

    P.S. I hope you’ve had a chance to talk to your MD. There are different types of colitis. Also, there is a test for gluten intolerance. I would get a gastroenterology consult and a dietician consult before making any permanent diet changes. For now I would stick to a “BRAT” diet (Bananas, Rice, Applesauce, Tea & Toast). Definitely no dairy, meat or sugar substitutes!

  16. AW, adore your prints! I too, like every woman it seems, have GI issues! I’ve been to the hospital a few times, had my appendix inspected, been given medication for IBS that caused me to break out in hives and even experimented with the macrobiotic diet! I’m looking into being tested for Celiac Disease or Gluten Intolerance. LOL, you’re not alone and thanks for sharing your journey with us 🙂 All good thoughts and love your way from Asia (the home of ramen noodles, as it were)

  17. (Sometimes with certain stomach disorders, nuts can be a big no-no. If they keep agreeing with you for now then stick with what comforts you, but if you seem to have worsening symptons I’d say switch to plain or peanut M&M’s -since there’s no pieces in them).

  18. Awesome prints! We have a spare bedroom/living room (aka the man cave) that looks to be painted a similar color. I think I may have to buy some prints like yours to hang in there! Would be perfect!

    And will need to buy my neighbors the pug loves cake one. Hilarious! Even though he’s at his “svelt” weight right now.

    So Iv’e been reading your blog for a while now an think you are awesome. I just wanted to say sorry to hear about your Colitis, and that I do understand what you are going through as my husband got diagnosed with it 3 year ago and it’s been a real struggle. I am a nutritionist so he is lucky there are many areas of this condition I can explain to him. Anyway just wanted to say hang in there, you will get through, and if you find any magic remedies, i’d love to know!! xx
