Hey, hey!
I have a quick, easy, and tasty recipe for you guys! This meals combines some of my very favorite ingredients– quinoa, shrimp, feta, and honey mustard– into a nutritious and satisfying meal that you can eat either hot or cold. The best part about this dish, of course, is how quickly it comes together. It takes just a matter of minutes and the leftovers are seriously delicious. Enjoy!
Ingredients:
- 16 ounces cooked quinoa
- 1/2 pound cooked shrimp, tails removed
- 1/2 medium tomato. diced
- 1/2 large cucumber, diced
- 2 tbsp honey mustard
- 1/4 cup crumbled feta
- salt + pepper to taste
Directions: Combine ingredients in a large mixing bowl. Serve immediately or chill in the refrigerator. Store leftovers in a plastic container with lid.
Makes 2-4 servings
