I have a quick, easy, and tasty recipe for you guys! This meals combines some of my very favorite ingredients– quinoa, shrimp, feta, and honey mustard– into a nutritious and satisfying meal that you can eat either hot or cold. The best part about this dish, of course, is how quickly it comes together. It takes just a matter of minutes and the leftovers are seriously delicious. Enjoy!

Honey Mustard Quinoa Shrimp Salad


  • 16 ounces cooked quinoa
  • 1/2 pound cooked shrimp, tails removed
  • 1/2 medium tomato. diced
  • 1/2 large cucumber, diced
  • 2 tbsp honey mustard
  • 1/4 cup crumbled feta
  • salt + pepper to taste

Directions: Combine ingredients in a large mixing bowl. Serve immediately or chill in the refrigerator. Store leftovers in a plastic container with lid.


Makes 2-4 servings



  1. Hi Tina – I have read your blog for years now – love it! My son’s girlfriend just found out she has Ulcerative Colitis 🙁 — she is so young – 21! I don’t want to ask you to go into a ton of detail – but can you tell me, from your years of experience with this condition, what i the best book you have read on the subject and are there any tips that you have discovered through the years that have been super helpful? Also, how much of a rule do you believe stress has to do with it? Thank you SO MUCH! I hate to bug you, but when I found out I knew that you might have some helpful information. Thanks!!!
