An in-depth, 4-week reverse dieting course for women who feel like their metabolism has slowed down, think they might have hormonal imbalance and can’t lose weight no matter what they do.

It’s Sunday Movie Night, so my hubby is waiting patiently for me to finish blogging and come join him on the couch. We’re watching 500 Days of Summer tonight. (Have you seen it?)

I’m really lovin’ our new Sunday night tradition of getting into our sweats and watching a movie together. I actually started looking forward to it this morning! It definitely makes easing back into the work week a little bit easier. 😀


For dinner, Mal and I whipped up a garlicky shrimp dish with roasted brussels sprouts and couscous. Mal cooked the shrimp and couscous while I tossed the brussels sprouts in garlic oil and popped them into the oven to roast. When the brussels sprouts were finished cooking, we mixed everything together. Dinner was on the table in no time!



I added some romaine lettuce to give my portion some more “volume.”

Mal also munched on some Ruffles before dinner. He guessed that he ate 2-3 servings.


As always, I wanted something sweet after dinner.

I try not to keep too many goodies in the house because I usually end up chowing them, so the treats were limited this evening. But, then, some packets of apple-cinnamon instant oatmeal caught my attention.


I love pretty much all oatmeal, but apple-cinnamon is just not my favorite. These packets have been sitting in the pantry for months and months now.


I used the packets of instant oatmeal to create a really yummy apple cinnamon muffin. Mal even liked them– and, he’s really picky about my baked goods. He always thinks they taste too healthy. I guess these muffins past the “too healthy” taste test! 😉


Easy Apple Cinnamon Muffins

Makes 12 mini muffins


  • 5 packets of apple-cinnamon instant oatmeal
  • 1/4 cup all-purpose flour
  • 1 tsp baking powder
  • 2 eggs
  • 1/4 cup canola oil


  • Preheat oven to 350*F
  • Combine all ingredients in a large mixing bowl
  • Coat a mini muffin tin with non-stick cooking spray
  • Pour batter into muffin cups
  • Bake for 15-20 minutes
  • Allow to cool and enjoy!


I bet this recipe would work well with other instant oatmeal flavors too. I can’t wait to try maple-brown sugar with some walnuts and raisins. Doesn’t that sound good!?

  2. I don’t like instant oats at all–they just taste too sweet and chemical-y. Much love for Quaker Oats but only the old-fashioned kind. Enjoy the movie. I’m going to watch my DVD-ed Betty White SNL. 😀

  3. The movie is cute/weird/quirky….enjoy! I love the idea of using up instant oatmeal packets. I never eat instant oatmeal anymore (although I ate them all the time growing up) but the sugaryness works perfectly for dessert!

  4. Tina, try mixing in unsweetened applesauce to your apple cinnamon oatmeal. It taste just like a apple crisp. I even have the boys at work eating it.

  6. I wish I could get into movies, but I always sit there for 20min and then get up because I get bored. My poor husband always ends up watching the movies by himself.

  7. Yay for movie night! My hubby and I do that every Friday night; we have three small children so we try to have date night at home in lieu of hiring a sitter. We usually chill a bottle of wine and make some sort of spicy noodle type of dish or thai curry. Totally agree about the sweats…comfort is a must. My (British) parents call it “getting into your telly gear”.

  8. Your recipes are awesome to experiment with. I’m a vegan girl but your recipes are easy to “veganize” and add some spice to life. Don’t get me wrong; I love my fruits and veggies, but I also enjoy good vegan cuisine and experimentation. The muffins look great, too. So when I have to go shopping,the oatmeal muffin ingredients are going on my list! Except I’m a maple & brown sugar oatmeal fan, you have great ideas!

  9. Those muffins are SO COOL! I love how you’re able to just bake something without a recipe and have it come out not only undestroyed, but YUMMY too! 😀

    I haven’t had “movie night” in a looooong time. It should be a habit to get back into! 😀 I like that movie, though! It’s so cute 🙂 I love Zooey Deschanel. (The ending’s a little cheesy, though. :S)

  10. Um, I kinda love everything about this post. I love the his and hers comparison (Mal’s food reminds me of my bf’s portions!), I LOVE roasted brussel sprouts, I love Ruffles cheddar and sour cream (heehee) and I actually love the apple-cinnamon instant oatmeal (to think I’m not a cinnamon gal). But I think I’m gonna love the muffins made with maple-and-brown-sugar with-walnuts-and-raisins more!

  11. You gave me such a good idea!!! I have some Peach Oatmeal I bought a while ago and I just hate the flavor. I will turn them into Peach Oatmeal Muffins as I am craving something sweet right now! Yay! I was worried that I will have to just toss them and I hate doing that, it’s like throwing money on the street. Thank you!!!! 🙂 Enjoy your movie night!

  16. at first i thought you were going to make a bowl of oatmeal, and i thought that was kind of gross after dinner, but to each his own, right- i love how you just throw homemade dessert together! so much better than anything store bought.

  19. I know most women are in perpetual awe of male metabolisms and food habits…my guy eats at least seven times a day, meal size quantities, and still stays hungry. I’m not sure whether I should be jealous or frightened by his science experiment of a stomach.
    Loving movie and calm nights more as I get older – we’re documentary freaks, and the routine has become put in a film, grab a bottle of wine and enjoy a cozy night in.

  20. I absolutely LOVED 500 Days of Summer! It’s not your typical chick flick which I liked. Loved the actors in it and the music is awesome. I listen to the soundtrack on repeat – it’s great music to get me motivated to get some work done! It’s also good workout music. I hope you like it!

    I’m with you on the apple-cinnamon thing; to me, that type of oatmeal just tastes fake!! Good idea with the muffins! I might have to make some very soon 🙂 Have fun!
