I’m the owner of Carrots ‘N’ Cake as well as a Certified Nutrition Coach and Functional Diagnostic Nutrition Practitioner (FDN-P). I use macros and functional nutrition to help women find balance within their diets while achieving their body composition goals.


An in-depth, 4-week reverse dieting course for women who feel like their metabolism has slowed down, think they might have hormonal imbalance and can’t lose weight no matter what they do.

What day is it? It’s Wednesday, right? I could have sworn it was Thursday today. Apparently, I’m really ready for the weekend to be here!

I packed the best lunch today: homemade salad with crumbled blue cheese, YoBaby 3-in-1 peach & squash yogurt with organic almond granola, and a banana. I loved it. I wish all of my lunches were like this one!



I had a few errands to run after work, so I grabbed a bag of Almond M&Ms to snack on. They quieted my stomach while I ran around the mall, but they had zero staying-power. You’d think I would have learned my lesson by now! 😕


When I got finally got home, Mal and I took Murphy for his long walk of the day and then I headed out for a run around the neighborhood.

Before lacing up my sneakers, I snacked on a piece of Fruit & Nut Manna Bread with Barney Butter smeared on top. No matter what, I always need to have a little something in my stomach when I exercise. Otherwise, I feel so weak.



My run was AWESOME tonight!!! The weather was perfect, I rocked out to Lady Gaga, and I ran 5 miles with no hip pain! Hooray! :mrgreen:

The run was also fun because I played a little game with Pandora on my iPhone: every time a Lady Gaga song came on, I picked up my pace for the entire duration of the song. By mile 4, I had only heard two songs, so I added Britney songs to the list. Letting the music dictate my workout definitely made it fly by!

I ran 5 miles in 43:33 (8:42 pace), which isn’t too shabby considering I haven’t run more than 4 miles in a good 6 months. (For the new readers, I’ve been battling a hip injury since April 2009.)

After my run, I made sure to stretch for a solid 15 minutes just like my chiropractor suggested. All of this stretching really seems to be helping. But, I’ll let ya know how my hip feels tomorrow! 😉

I also rolled the crap out of my quads, hams, and IT bands using my Tiger Tail. Thing thing really helps my legs too.

When I walked through the door after my run, dinner was waiting for me. Well, all of the ingredients were prepared on a plate; I just had to put it together.


For dinner, Mal made “BALT” sandwiches: bacon, avocado, lettuce, and tomato.


I had mine on a Sandwich Thin with a little bit of mayo. It was such a good sandwich! My husband is a genius! 😀


I’m in the mood to bake tonight, so I’m going to try out the spelt flour from the Beidlers. Wish me luck! 😀

  3. Congrats on a successful run! It was a fast one too! I just ordered myself a tiger tail since I think it will be a little easier to transport during my summer trips than my foam roller.

  4. Congrats on that awesome 5 mile run time! So motivating! And your running outfit is so cute! Don’t you love how great workout clothes make you want to work out more? That’s happened to me since the first time I did yoga a few years ago – golden! 🙂

  7. Can’t wait for the weekend – We are hanging out with friends overnight at their place on the Tennessee River and going boating and watching the fireworks from there – Our first time being here for the 4th, so I’m excited!!! Have fun!! =)

  8. Agh BALTS are my favorite! The avocado makes it! I don’t like mayo and for me the avocado gives moisture and richness so who would ever need… icky mayo slime. But that is just me!

    Can’t wait for the weeekend either, heading to Tucson, AZ for a festival/show/carnival thingie on the 4th. I hope their fireworks are good!

  10. Amazing run! That’s awesome you had no hip pain!
    I can’t have too much in my tummy before a run because the jostling makes me feel ill so I generally do not eat a thing for at least 2 hours prior to a run.

  11. I eat BALTs all the time (okay, minus the T. Not a raw tomato fan)! Avocado + bacon = perfect marriage!

    I have no plans for Fourth of July. Just making buffalo chili for a bunch of friends on Friday! Oh, and going to Hooters with a bunch of guys on Saturday. Is that weird?

  12. Do you know why you thought it was Thursday? Because it is! (In Australia, at least :P) Plus, I can’t believe you even managed to make bacon look appealing to me, when I really don’t like the stuff! 😀

  13. I wish it was Thursday! Well, now it is where I am, so now I wish it was Friday! So close to the weekend… celebrating the fourth in some tiny mozambican village with some other americans. we will probably eat beans and rice instead of hot dogs and burgers and listen to chickens squawking instead of fireworks, but hey, its the thought that counts.

  14. I’m kind of sad since I won’t be having a traditional Fourth of July weekend. I won’t be in the U.S., which means no hanging out with the fam, watching fireworks and grilling food.

    There are a ton of Americans here in Florence, but I think this weekend will be like any other for me.

  16. Speaking of baking…….I made the pumpkin oatmeal muffins that you posted a short time back……….all I can say is AMAZING!!!!! I love them!! I added Nestle mini chocolate chips to mine…..and ooohhhhhh soooooo goood!! Thanks for sharing it!! It will definitely be a regularly used recipe in my house!!
