Now that’s it’s the second week of October, I think we’re even more obsessed with all things pumpkin. I mean, you walk into Trader Joe’s and, holy cow, pumpkin overload. I actually really love pumpkin, so I don’t mind seeing it everywhere. It’s just all the more reason to eat it, right? I also really love meals and snacks that are both tasty and filling, so creating a round-up of high-protein pumpkin recipes was an easy decision.   1. Pumpkin is my favorite addition for baking, so I always add a scoop to my protein pancakes and protein cookies. It makes them so moist and chewy, yum!

  2. Give me pumpkin everything! I actually was thinking the other day how when you open a can of puréed pumpkin, it seems like I always have some leftover forcing me to make another recipe, but I don’t mind because I love it so much.

  3. I love every pumpkin this time of year too! Thanks for posting all these recipes. I’m excited to try the protein balls and pancakes. For the protein balls I have natural peanut butter and I’ve read that peanut butter has more protein than almond butter, and it would be great before a workout.
