I can’t believe it’s already September 12th! Wasn’t it just September 1st? Holy cow. I can’t believe the month is moving along so quickly, but, hey, I’m not complaining. BRING ON FALL!

Speaking of which, Mal and I sat on the couch last night and coordinated our calendars for the upcoming season (while Murphy snoozed on my lap).

I knew things were going to be a little hectic this fall, but I didn’t realize just how crazy they’re going to be until last night. Check out the next two months!

  • September 15: Matthew’s baptism
  • September 18: My sister’s birthday
  • September 20: Housewarming get-together
  • September 21: 2-year CrossFit 781 anniversary party
  • September 22: NYC
  • September 23-25: Cooking Cottage in the Hamptons
  • September 26-27: Visit to the CVS headquarters
  • October 1: No Meat Athlete book signing
  • October 4-7: Newport, Rhode Island
  • October 11-13: Wedding
  • October 17-20: Runner’s World Half Marathon
  • October 18: Mom’s birthday
  • October 22-23: NYC (tentative)

Lots of fun stuff, right? It’s going to be a busy couple of months, but I am pumped!

Also, last night, I made a really tasty recipe for β€œfried” Brussels sprouts. Instead of breading and deep frying them in oil, I baked them in a lighter batter of almond meal, egg whites, and grated Parmesan cheese. They turned out so well, I just had to share!

Healthy β€œFried” Brussels Sprouts

Ingredients:

  • 24 ounces of Brussels sprouts, cut in half
  • 1/3 cup liquid egg whites (or 2 large)
  • 1/3 cup almond meal
  • 1/4 cup grated Parmesan
  • 1 tbsp extra virgin olive oil
  • 1 tbsp garlic powder
  • 1/2 tsp sea salt
  • 1/4 tsp black pepper

Directions:

  1. Preheat oven to 400 degrees F.
  2. In a large mixing bowl, combine all of the ingredients. Be sure to fully coat Brussels sprouts.
  3. Pour Brussels sprouts on a prepared baking sheet (I used non-stick cooking spray) and spread around evenly.
  4. Bake for 45-50 minutes until Brussels sprouts start to brown, tossing occasionally.
  5. Remove from oven and serve immediately.

  1. My bf and I definitely have to coordinate schedules! I can’t believe how much you guys have going on, that’s an impressive list. I love how involved in the community you are and hope to be involved as much myself one day! Thanks Tina you’re the best.

  2. Wow!! That’s a crazy schedule — but all good, right??? I’m such a homebody, I’d have a hard time keeping that up. I’m pretty much the planner in the couple so I usually take care of the calendar. I like fall, but I wish football season didn’t come along wth it! Lol.

  3. It sounds like you’ve got an awesome few months coming up! I, on the other hand, am totally looking forward to my relatively clear schedule this fall after a summer of go, go, going. I can’t wait to spend some time at home and just relax. I don’t really coordinate calendars with the boyfriend but really should – maybe an item to tackle during our upcoming down time!

    1. I do love the roasted veggies especially sprouts. I usually keep it simple with just olive oil, salt and pepper but this looks just as simple and so much better.

  6. I love fall! My anniversary is in the fall and I can’t wait to have fires in the fire place again! I also love fall clothes: sweaters, boots, jackets…. So much fun shopping. I know you say you’re not good at shopping but TJ maxx and Marshalls ( you have to choose which store) can have great items. A cute shell under a tailored jacket with jeans and boots would be adorable. Been getting into leggings too with a long sweater and boots. So comfy and warm!

  7. That does sound like a busy few months but so much fun! This fall I’m looking forward to this pumpkin festival that goes on in my town, hosting a halloween party, and as nerdy as it sounds, I’m just so excited to be going back to school for a post-bacc, and doing homework outside in the crisp fall weather while the leaves are changing colors. Those brussels sprouts look really good! And I’m not a fan of them but I might try that recipe!

  8. Tina, my husband asked me to join him for a quick business trip to Foxboro, MA. I’ll just be there a few hours, anything special to do? I was eyeing the nearby Wrentham Outlets…would love any recommendations!

  9. Yay for brussels sprouts, I can’t wait to try them!!
    I just did the Jimmy Fund Walk again this year on Sunday (although they lied! It’s not a half marathon, I GPSed it and it was 14.65 miles!) and then ran 3.25 miles on Tuesday, I’m quite sore today! I love the wine tasting event, though, I’ll have to look into it! Thanks for the info! My family has funraised for the Jimmy Fund since 1995 (my sister died of cancer in 1997 when she was 21) and we’ve raised over a half a million dollars since then (not including the totals from this years walk yet). I’m always happy to support the cause…and drink wine!

    I’m so excited you’ll be in Orlando! I attend college here and got the opportunity to run in the Princess Half Marathon two years ago. Disney races are a blast! I’ve always wanted to do the Wine & Dine but my schedule has never matched up with it. Maybe one day!

  13. Wow, you are crazy busy but it all seems like fun stuff! I am also going to the Runner’s World Half and Festival and I am super excited for that! The Disney Half looks like so much fun…I may have to get in on that!

    My husband is a bar manager and he is always working nights and weekends :(…so I tend to do things with my mom instead. I’m lucky to have her :).

  14. Kabocha sqaush, hands down, sweet potato and brussels and cauliflower (especially with curry powder) are in a tie for second place followed closely by kale. I’m a roasted veggie nut!!! Eggplant is amazing bread too – I bet the almond meal would be great for making eggplant fries! Looking forward to wearing new boots, sticking on a hat and not having to wash my hair occasionally too! Totally heading over to check out the no meat athlete book! Have you read it? Thoughts?

  15. Mmmm, those look delicious. My favorite roasted vegetable…toss up between brussels sprouts and broccoli. Ina Garten’s Best Ever Roasted Broccoli is one of my favorite things ever.

    I can’t believe it’s almost fall, but I’m looking forward to seeing the changing colors and carving pumpkins!

  16. Haven’t coordinated yet, but we need to! I have many meetings on odd days and he never remembers. I think there’s a google calendar that will sync our schedules? I’m looking forward to all things fall…football, pumpkin spice coffee, Thanksgiving, my bday, our 2nd anniversary, hubby’s bday….I could go on and on!

  17. That looks like a crazy (but great) schedule!! My fiancé and I don’t formally coordinate our schedules. I am the planner in our relationship so I usually make both of our schedules! Haha πŸ™‚ I love fall!!!

  18. I am always sad to see Summer go, but I love the Fall, too. My birthday is at the end of the month and I cannot wait to go to the pumpkin patch and then come home and read by the fire place while drinking pumpkin spice coffee. We plan on going apple picking and on a hayride, too!

    I am also running a 15K, Ragnar, a marathon and 30K and a 6 hour race, all with in 3 weeks of each other. It will be a busy few weeks but punctuated with bouts of chilling on the couch watching movies in between.

  20. You’re doing Wine & Dine?! I have a friend who is running it and I’m going to support her since I live an hour from Disney and would love to meet up if you have the time/energy! I’m sure 10,000 people in the area will be trying to get your attention, so I know it might not be possible!

    I cannot wait to try these brussels sprouts. I love brussels sprouts and don’t really care for fried food because it makes my stomach hurt, but I can’t wait to try this. I love roasting zucchini, potatoes, eggplant, and squash πŸ™‚

  21. Definitely looking forward to tackling some longer runs! The furthest I have gone in Houston is 5 miles, but I’m getting the itch to run more. The mornings are slowly but surely getting cooler…slowly. LOL! Got to love Texas!

    I’m excited to get out of tank tops & flip-flops. I miss my boots! lol. I also can’t wait to make healthy soups & do some baking. Plus, pumpkin!
