Carrots ‘N’ Cake is BACK! Get ready for some BLOGGIN!
HAPPY CINCO DE MAYO!!! I couldn’t let this wonderful recipe get lost in the shuffle! My cousin, Meeghan, made it a couple of weeks ago for a family party, and I’ve been obsessed ever since.
Meeghan’s Edamame Guacamole
Ingredients:
- 1 ripe avocado
- 1 cup edamame, shelled
- 1 lime, juiced
- 1 chipotle pepper in adobo sauce (these are really hot so use at your own discretion)
- 2 tsp minced garlic
- 1/3 bunch of cilantro
- 1/2 cup chopped tomato
- 1/4 cup chopped onion
- Salt and pepper to taste
Directions:
- Combine all ingredients in a food processor until smooth
- Serve cold with pita chips, tortilla chips, or crackers
