Edamame Guacamole

Carrots ‘N’ Cake is BACK! Get ready for some BLOGGIN!

HAPPY CINCO DE MAYO!!! I couldn’t let this wonderful recipe get lost in the shuffle! My cousin, Meeghan, made it a couple of weeks ago for a family party, and I’ve been obsessed ever since.


Meeghan’s Edamame Guacamole


  • 1 ripe avocado
  • 1 cup edamame, shelled
  • 1 lime, juiced
  • 1 chipotle pepper in adobo sauce (these are really hot so use at your own discretion)
  • 2 tsp minced garlic
  • 1/3 bunch of cilantro
  • 1/2 cup chopped tomato
  • 1/4 cup chopped onion
  • Salt and pepper to taste


  • Combine all ingredients in a food processor until smooth
  • Serve cold with pita chips, tortilla chips, or crackers


Isn’t this serving bowl fun? It’s supposed to look like an Origami paper boat and it’s available in my shop!

  2. Welcome back! Somehow I doubt I’d ever get as far as making this guacamole… I can’t resist eating edamame straight. They’re a favourite snack, but sadly hard to source here in Canberra!

  4. Oh yum! I saw a similar recipe somewhere and liked the idea of the edamame in place of avocados for a lower-calorie option. Hadn’t thought of chiles in adobo sauce, either, so will definitely try this one. Thanks for sharing!
