Gluten-Free & Egg-Free “Cookie Dough”

Mastermind Weekend 1/16

Hey there!

I'm Tina

Good morning! Happy Hump Day!

I visited my new nephew, Matthew, yesterday afternoon. He’s only a day older since the last time I saw him, but he’s already so different. The first day I saw him when he was only 24 hours old, he just slept and didn’t do much. Yesterday, though, he had his eyes open, he was squirming around, and he even sneezed a few times. He’s so cool.

Four generations: My sister, Mom, Grammie, and Matthew!

My mom and I brought lunch to my sister’s house yesterday and kept it simple with make-your-own-sandwiches. My sister and her husband have barely slept since Matthew was born, so we wanted to make things as easy as possible for them. We also stocked their fridge with lots of delicious food, so they don’t need to do too much cooking in the coming days while they try to get into a routine with Matthew and begin to adjust to their new life.

When I got home from visiting Matthew, I had a major craving for chocolate chip cookie dough, so I got a little creative in the kitchen and whipped up a gluten-free and egg-free batch using almond butter, almond flour, honey, vanilla extract, and white chocolate chips. It turned out so well and totally satisfied my craving – I just ate it straight from the bowl! Mmm!

  • 1/4 cup almond flour
  • 2 tbsp chocolate morsels
  • 1 tsp vanilla extract
  • 1-2 tsp honey
  • 1/8 tsp sea salt

Directions: Combine ingredients in a small bowl. Refrigerate for at least 30 minutes. Grab a spoon and enjoy!

At CrossFit yesterday, the Skill part of our workout was selecting a goal for July, writing it on the Goal Board, and then working on it for 15 minutes. I picked a Muscle Up.

I’ve made some decent progress this year with many of my CrossFit skills, but the Muscle Up is just something I haven’t worked on at all. It actually sort of scares me, and, for some reason, I think it’s totally out of my reach, which definitely won’t help me achieve this goal. I figured if I set this goal and aimed high, I’d spend a lot of time working on it and maybe not get a Muscle Up in July, but make enough progress that I will in August or September. I think half the battle is committing to a new goal and actually working at it, so, hopefully, I’ll make some progress in the coming months.

Questions of the Day

Do you have a niece/nephew? Any tips for being a kick-ass aunt?

What are your goals for July?

CrossFitters: Any tips for muscle ups?

  1. I cannot wait to try the cookie dough! What almond butter do you suggest? I have the MaraNatha.

During the Open when the announced 13.3 there was a video on facebook (from you tube) about doing muscle ups. I know I like CrossFit Games Breakdown 13.3 Carl Paoli on You Tube. He has great videos on TONS of skills!

Goals for this month I am really working towards 100 double unders in 2 minutes and increasing my numbers on max effort pull ups and toes to bar! It hurts to hold onto the bar! I just ordered some natural grips, I hope they help!

  2. Great idea for the no-bake cookie dough!

Yay for nephews!! I love love being an aunt.. And that was so awesome of you guys to stock their fridge πŸ™‚ I’d say, talking to her on the phone will help tons–sometimes mamas need adult interaction, and/or taking her out once in awhile! Also, offering to watch him when he’s a bit older will def score you points too πŸ˜‰

  3. I have all the ingredients for the no bake cookie dough, I cant wait to try it πŸ™‚ It would be good with nikkis coconut butter too!

  4. I’m so jealous you get to be an aunt, it seems like the best thing to be ever. You can be super cool and spoil the kid and then send it back to it’s parents. My goal is to be the person that my brothers kids will threaten to run away and live with. (all I need to do is get some nieces and nephews, then my plan will be perfect)

  5. Congrats on your sweet nephew! I have a 5 yr old nephew and a niece who just turned 1 and being an auntie is the best thing ever!! I say spoil them rotten πŸ™‚ and spend as much time as possible with them! They’re only little for so long and it goes by sooo fast!

  6. I have 1 nephew, 3 nieces, and 1 more niece on the way! They are all absolutely adorable. I love listening to what THEY want to do (make a fort out of towels and sheets? make a “potion” out of shampoo and soap? go “hunting” for fairies on a hike? bring it on!), and just feeling like a kid again. Of course … never forget their birthdays :). Congratulations and enjoy!

  7. Maybe try bar muscle ups first so you have the stability of the bar.

Also maybe have someone video tape your attempts or your pull ups and ring dips. Sometimes seeing it helps figure things out.

Are you able to do ring dips?

Good luck on these bad boys!!

    1. Yep, I can do ring dips. I’m not a super star at them, but I can usually get through quite a few in a WOD. Definitely need to work on my triceps strength!

  8. I HAVE to bookmark this recipe to try when I get home from vacation. Babies are the best πŸ™‚ Enjoy the new addition to your family!

  9. Try learning Bar Muscle-ups first! They’re not as scary and will help boost your confidence. πŸ™‚ Good luck!

      1. @Tina: Thaat’s awesome. I am still pretty far from doing this. I need to get my kipping chest to bar’s first!

  10. I love being an aunt! I have a nephew and twin nieces! The best advice would just be consistent with them. I am constantly keeping them for my sister, and we play, read, and laugh constantly. It is so much fun to have a great relationship with the kids! They are constantly changing! My goal for to July lengthen my time for cardio workouts. πŸ™‚ Have fun being an aunt! It is by far the greatest blessing ever!

  11. Two solid weeks of MU practice and you’ll get it. For real! You are plenty strong and move well, so it just takes dedicated practice. Maybe even sacrifice a few WODs so your arms are fresh? I know that my elbows and arms felt SMOKED when I started trying on a regular basis and once the muscle up muscles (ha) were fried, I would get super frustrated. You can do it!!

  12. I have 6 nieces! Still waiting for that nephew πŸ™‚ Just being there for your nephew is the best thing and spend as much time with him as possible. I definitely find that as my nieces have gotten older, they start to look up to you more so the more time you can spend with them and influence them in good ways, it’s the best! It also helps to take then out for ice cream too!

  13. Congratulations on becoming an Auntie! I’ve got 5 nephews under the age of 6 and this is what I’ve learned so far:

    – While he is still a young baby keep a face cloth by the changing table to cover him up while changing his diaper so you don’t get an accidental shower
    – Keep a few toys, diapers, and a spare bottle at your place for visits
    – Visit him on a regular basis – the smile on his face when you arrive is one of the best things in the world
    – When he’s old enough surprise him with treats πŸ™‚

  14. Your little nephew is so lucky to have you for an aunt! I don’t have any experience AS an aunt, but my favorite aunts have always taken time out of their busy schedules to spend time with me, send me a note when I needed it most, and just be there for me. Those are the best things an aunt can do!

  15. So I definitely broke down and made myself a little batch of this cookie dough. Holy moley it was so delicious! Dangerously too easy to make…

    Thank you! πŸ™‚

  16. Right now it may see a little far out, but trust me they grow quick πŸ™
Have an open door policy with Matthew. Start letting him know when he is young that he can always come to you with anything….. and it will be private unless it is a issue that needs to be addressed with mom and dad.
My oldest nephew is 18 (leaving for the army next wk) and this year he has come to me with so many personal issues that he didn’t feel comfortable going to his parents with. He told me after our last talk how much he appropriated that I was there to help him through this last year with advise and just letting him talk without passing judgment. Knowing I’m a safe refuge doesn’t make me feel guilty knowing stuff my sister doesn’t.

  18. Goal for July: find a crossfit gym near my new apartment by move-in day!!

As for being a kick-ass aunt…take full advantage of spoiling this child to the best of your ability. It’s like grand-parenting, without having kids first!

  19. I don’t have any tips for MU but just to keep practicing practicing practicing. I’m still working on getting a pull up unassisted. But as the saying goes, “practice makes perfect.” Keep up the hard work and please post videos of your MU/MU attempts!!!!

    1. My favorite almond butter is whatever is on sale! πŸ™‚ I like them all, but my favorite is the Stop & Shop brand.

  20. Hi! I am a huge fan and regular reader of your blog, but I never comment. This is a special occasion, though! Congratulations to you and your sister and your whole family! What a great and loving family Matthew has– already a lucky kid πŸ™‚

PS I was admittedly was sorta bummed when you said you wouldn’t be taking as many food photos (I find your composition makes everything look delicious and inspires me to try the recipe, myself). Then I checked CnC this morning and the 4th of July post was full of food pics, so I was thrilled and inspired (and now a little hungry, too).

Best of luck! Go Auntie Tina, go!

  21. Holy Moly is right! I “needed” a treat last night and remembered this recipe…I subbed cinnamon chips and a dash of cinnamon since that’s my weakness. I’m thinking of adding some GF oatmeal next time and roll them into balls! If it makes it that long…..

Question do you use pure or faux vanilla extract?

  22. Sounds like you already are an awesome aunt! I have two little girls under 2 and I love when family shows up at my house with food! Keep up the good work!

  23. Great recipe! I also halved the recipe and had to go with ingredients that I had: Coconut butter, almond flour, peanut butter chips (YUM!) and vanilla/salt. I didn’t have honey, phooey! But it was still amazing!
