I’m the owner of Carrots ‘N’ Cake as well as a Certified Nutrition Coach and Functional Diagnostic Nutrition Practitioner (FDN-P). I use macros and functional nutrition to help women find balance within their diets while achieving their body composition goals.

Good morning! Happy Hump Day!


Yesterday morning started with an especially delicious breakfast. I love it when meals come out so much better than expected! I had two waffles with melt-y almond butter spread in between and warm, sweet cinnamon apples on top. So yum!

To make the apples, I just chopped up a couple, placed them in a microwave-safe bowl, drizzled honey and sprinkled cinnamon on top, and then nuked them for 90 seconds. I ended up making a good size batch, so I have leftovers for later in the week.

Once again, my morning was full of work, work, work with a 27-pound pug on my lap. I also drank some OJ as well as a decaf almond milk latte while I worked.

A little before lunchtime, I headed out to run a few errands, which included a stop at Whole Foods (obviously – I have a problem) and the post office to mail a special gift to my Secret Santa person. A group of us bloggers did a holiday gift exchange this year, so I’m excited for my person to receive their gift in the mail and, of course, see what comes in the mail for me! Oh, the holidays”¦ I love them so much!


After running my errands, I came home and pulled all of the leftovers out of the refrigerator to make a “garbage salad.”

In the mix: mixed greens, baby spinach, tomatoes, home fries, ground turkey with taco seasoning, and crumbled feta. It was a random mix, but quite tasty!

A couple of hours later, I had a craving for something sweet and delicious (i.e. chocolate), so I made myself a mug of hot cocoa and snacked on some chocolate chip cookies. It wasn’t the healthiest or most satisfying snack, but sometimes you just need to give into your chocolate cravings!

A little while later, I headed to CrossFit for a fun running WOD. I thought you guys would like this one too, so I made it into a pin-able image!

I did the workout as prescribed (95 pounds for the deadlifts), but I was SO SLOW when it came to the running. Running is usually fairly easy for it, but it definitely kicked my butt last night. People were passing me right and left, and one guy even lapped me! Surprisingly, the deadlifts and Double Unders were the least of my worries! I finished 4 rounds in 20 minutes.

  1. My healthish snack is chocolate covered almonds if I don’t eat 100 of them. They are easy to snack on and overeat before you know it!

  2. I’m doing a Secret Santa exchange for work but I love the idea of doing one with blog friends! And my healthy go-to for chocolate is my mug cookie recipe – quick, easy, delicious and full of chocolate 🙂

  3. That salad looks great! Some days the only snack that will do are cookies! 🙂

    I have found that when I am having a chocolate craving if I make some greek yogurt with chocolate protein powder. Sometimes I will put it in the freezer for more of a “frozen yogurt” type snack.

  4. My office is doing a Secret Santa exchange. I am going to decide what I am getting today. It can be so hard picking out the perfect Secret Santa present. I am going to put together a list of awesome gift options.
    When I need a chocolate fix, I go for dove chocolate small candies. Individually wrapped and ready to go. Yum.

  5. I love how you had cookies as a pre work out snack 😉 YOLO

    and I love the fact that the cookies didnt guilt you into not working out! Sometimes when I eat unhealthy-ish I toss the exercise out the window which is absolutely silly!

  6. If im craving chocolate I usually make a protein brownie, or a healthier oatmeal chocolate chip cookie, but if i dont really care ill just eat whatever sounds good 🙂 That wod sounds fun too, I think I might do it tomorrow at open gym!

  7. I don’t have national cookie day excuse but I get some baking action on this morning…unfortunately it turned out to be a disaster…might have to give it another whirl later on now that I have an excuse!

  8. OMG that breakfast looks so yummy! I didn’t realize you could just nuke the apples like that, I can’t wait to try it! Maybe on some oatmeal? Now I can’t wait for breakfast tomorrow morning…

  9. My go-to when I’m craving chocolate? Hmm, probably chocolate. Because I’m simple like that. But dark chocolate is a must — milk chocolate just doesn’t cut it anymore.

    And that salad looks amazing. I feel like I only ever eat salads in the summer when all of the best ingredients are on sale. Winter, to me, is for the hearty crock pot meals. But darn if I don’t get a craving for a fresh spinach salad every so often.

  10. Mmm that breakfast looks good! I have an apple almost every day for a snack, so I always forget other great ways to eat them (like heating them up with cinnamon mmm).
    Also—your WOD from yesterday looks a lot like ours for tomorrow. A 20min AMRAP consisting of 400m run, 10 thrusters, 20 double unders. Psyching myself up to do prescribed (75lbs). I think, like you found, the running might actually be the rough part. 20min is sooo longgggg. OK I’m done whining! Should be fun!!

  12. I’m not doing a secret santa, but will be enjoying a few “White Elephant” games. 🙂

    I crave chocolate each and every day…if I want to be healthy-ish I have some dark chocolate or an oatmeal chocolate chip cookie. My problem is portion control! 🙂

  14. That scene for your making of your kitchen sink salad is totally what my counter looks like every night when I pack mine for lunch 🙂
    Those cookies look amazing! Whenever I’m craving sweet I will try to go for a trail mix of some kind with a few sweet things in it but also savory nuts to satisfy me. I like the kind with dried fruit, and I look for not too many added sugars! Tends to do the trick.
    I wanted to do the Secret Santa we are having at work but I will be in NYC the day of the exchange! Oh well haha I’d rather be in the city.

  15. In a pinch, I can satisfy a strong chocolate craving at home with a few handfuls of chocolate chips. The trick isn’t to limit myself but to eat them until I feel better. I do try and pay attention though to when I feel satisfied to avoid eating a whole bag lol. Intuitive eating at it’s best!

  16. I was on the fence about getting my FAVORITE pumpkin cookie for dessert tonight, and then I heard on the radio that it’s national cookie day. HELLO!

  17. Omg I dont think Ill have time to make cookies tonight but can i do a belated cookie day and make the salted oatmeal chocolate chips? Maybe Ill just make it my very own holiday called ashley eats more cookies than usual day.

  18. I want those cookies!!! I will have sugar-free hot chocolate or a Chobani coconut flip yogurt…or sometimes just a giant chocolate chip cookie because nothing else will do that trick!!

  20. I didn’t even know it was a cookie holiday but I ate a birthday cake oreo today!! Leftovers from my daughter’s birthday! I knew there was a reason my mind was telling me I wanted a cookie! It knew…it knew…
