Where did the night go!?! Holy moly, did it fly by! I can’t believe that it’s almost my bedtime! š Here’s just a quick recap of tonight’s dinner– I’ve got lots to do before I climb into bed and drift off to slumberland.Ā
I had purchased a loaf of French bread for a meal that Mal and I had planned to cook tonight, but unfortunately, I didn’t read the recipe in its entirety. It turns out that the total cook-time was 4 hours! After a late-ish workout at the gym, there was NO WAY that Mal and I were going to wait 4 hours to eat dinner! Instead, we improvised and made French bread pizzas withĀ prosciuttoĀ andĀ mozzarella.Ā
On the side, I also had some sweet potato “chips.”
How to: Preheat oven to 450*F, cut sweet potato into “chips,” coat baking sheet with non-stick cooking spray,Ā sprinkleĀ “chips” with salt, bake for 5 minutes, flip “chips” and bake for another 5 minutes until slightly crispy.Ā

For dessert, I took advantage of theĀ plethoraĀ of Easter treats in our apartment. I enjoyed a wonderful Easter egg-shaped chocolate-covered rice crispy treat. Mmmmm! š

Great dinner…I tried your sweet potato fries today with cinnamon and paprika and they are great! I’ll have to try the thinner chips too, the quicker cook time might be nice when I’m super hungry.

I had never had french bread pizza until college when my roommate made it for us. It had never even occurred to me that you could do that! Now, I think it’s a fun, easy dinner.
