I first experienced Mollie Katzen’s Feta-Walnut Stuffed Cucumbers when I met her at a cooking demo a few weeks ago, and I’ve been thinking about them ever since!
These Feta-Walnut Stuffed Cucumbers are the perfect summer appetizer– light and crisp, flavorful and unforgettable! The salty feta mixes nicely with the flavor of slightly bitter walnuts and cool, refreshing cucumber. Every bite is exciting! 😀
I would love to share this recipe with everyone, but I can’t just post Mollie’s recipes on the internet. This recipe is pretty close to the original, but if you want the real one, you’ll just have to buy Mollie’s book: The Vegetables that I Can’t Live Without! It’s easily my FAVORITE cookbook!

The author of that book is the same as the Moosewood cookbooks! Have you been to the restaurant in upstate NY? I want to go there someday. My boyfriend has had their very first book from the 1970’s! Awesome recipes!
